Abstract
La invencion proporciona cepas de levadura transformadas para reducir la represion por catabolito de nitrogeno de un gen que codifica para una actividad enzimatica de degradacion de urea expresada por la cepa de levadura bajo condiciones de fermentacion; las cepas de saccharamyces cerevisiae, por ejemplo se proporcionan teniendo actividad de carboxilasa urea-alofanato hidrolasa DUR1,2 mejorada, bajo condiciones de fermentacion del vino.
