Claims (9)
- (a) 이소플라본을 함유한 식물성 단백질 재료를, 상기 단백질 재료의 등전점부근보다 높은 pH를 가진 수성 추출제로 추출하여 단백질과 이소플라본으로 구성된 수성 추출물을 형성시키는 단계,(b) 수성 추출물의 pH를 상기 단백질 재료의 등전점 부근으로 조절하여 단백질 재료를 침전화시키는 단계, 및(c) 상기 침전화된 단백질 재료를 분리시킨 후, 상기 분리된 단백질 재료를, 처음 단백질 재료 중량의 4 배 미만에 해당하는 양의 물로 세정하여 이소플라본 함량이 높은 단백질 분리물을 제공하는 단계를 포함하는 것이 특징인 이소플라본 함량이 높은 식물성 단백질 분리물의 제조 방법.
- 제1항에 있어서,추출 단계는 6.0∼10.0의 pH 하에서 순행하는 것이 특징인 방법.
- 제2항에 있어서,추출 단계는 6.7∼9.7의 pH 하에서 수행하는 것이 특징인 방법.
- 제1항에 있어서,추출물의 pH는 4.4∼4.6으로 조절하는 것이 특징인 방법.
- 제1항에 있어서,식물성 단백질 재료는 추출제 대 단백질 재료의 중량비가 5:1∼12:1인 상태에서 상기 추출제로 추출하는 것이 특징인 방법.
- 제1항에 있어서,식물성 단백질 재료의 추출 단계는 2 단계 추출 과정을 포함하고, 이들 2 단계에 걸친 추출제 대 단백질 재료의 합계 중랑비는 총 11:1 내지 14:1을 초과하지 않는 것이 특징인 방법.
- 제1항에 있어서,침전화된 단백질 재료는 단백질 재료 중량의 2 배 미만에 해당하는 중량의 물로 세정하는 것이 특징인 방법.
- 제1항에 있어서,이소플라본 함량이 높은 분리물을 탈수시키는 단계를 포함하는 것이 특징인 방법.
- 제8항의 방법에 의해 제조된 이소플라본 함량이 높은 분리물.
