Abstract

L’invention se rapporte au domaine des ingrédients protéinés destiné à l’alimentation humaine et animale. Plus particulièrement, l’invention concerne un procédé de production d’un ingrédient protéiné végétal dont la teneur en isoflavones est réduite, obtenu à partir de protéines texturées issues de plantes protéagineuses, oléoprotéagineuses ou oléagineuses. Le produit obtenu présente une texture et une consistance proches de celle d’un produit carné. Figure de l’abrégé : 1
