Abstract

Monoclinic glutamic acid crystals are made by (1) crystalling from a mixture of an aqueous solution of monosodium glutamate, monoclinic glutamic acid crystals as seed crystals, and sufficient non-oxidizing mineral acid to adjust the pH of said solution to between about 2.5 and about 4, preferably 3.0 to 3.3; or (2), if no seed crystals are available, by crystallizing from an aqueous solution containing 5-15 per cent monosodium glutamate to which has been added with agitation within about thirty seconds sufficient non-oxidizing mineral acid to adjust the pH as under (1). In process (1), the aqueous solution may contain 5-40 per cent monosodium glutamate, and the process may be continuous.
