Abstract
Les tranches de fruit sèches se présentent sous la forme de copeaux qui sont immergés, avant le séchage par congélation, dans une solution convenant à des buts d'alimentation pour prévenir la réaction de brunissement Au surplus, afin d'empêcher la perte de la forme de copeau pendant l'entreposage, on a prévu un emballage qui contient un gaz de protection et qui empêche l'entrée en particulier de l'air et de la vapeur d'eau. La solution empêchant le brunissement est une solution aqueuse d'acide ascorbique d'une concentration de 0,1 à 0,5 %.
