Abstract
La presente invención está ubicada en el campo de la tecnología de los alimentos. La invención se refiere más específicamente a un sustituto de crema en donde los componentes derivados de leche o lácteos, por ejemplo, el componente de proteína de leche ha sido reemplazado por proteína intacta de leguminosas. La invención proporciona además productos de sustituto de crema tales como crema batida, crema culinaria, helado y sustituto de postre de leche, así como también métodos para producir éstos.
