Abstract
La presente invención es acerca de una matriz simbiótica pre-fermentada con base en una suspensión de cereal, preferiblemente avena, que contiene probióticos y prebióticos encapsulados, el proceso de manufactura y el uso correspondiente. El objeto de la presente invención es el desarrollo de una matriz simbiótica de cereal, preferiblemente a partir de avena, pre-fermentada con probióticos encapsulados y prebióticos libres y/o encapsulados, con el objetivo de complementar el mercado de alimentos funcionales actual y resolver problemas inherentes al periodo de vida de anaquel reducido de tales alimentos, debido a la pérdida de viabilidad probiótica hasta valores debajo de los límites mínimos necesarios con objeto de promover la actividad biológica. Adicionalmente, el objeto de la presente invención es mejorar las condiciones del proceso fermentativo en niveles diferentes, en particular la reducción del tiempo de fermentación con objeto de reducir el consumo de energía durante el proceso y el riesgo de reducción de la contaminación, así como promover el mantenimiento de la estabilidad microbiana de largo plazo. La matriz simbiótica pre-fermentada se diseña en particular, para aquellos casos en donde se presenta la intolerancia y/o alergia a los productos lácteos, aunque es además aplicable a las industrias farmacéuticas, de cosméticos y preferiblemente de alimentos, incluyendo alimentos para mascotas.
