Claims (20)
- 물로 어류 껍질을 수세, 산으로 처리 및 산성 pH에서 고온 추출단계를 포함하는 과정으로 이루어지는, 신선하거나 해동된 미가공 어류 껍질로부터 어류 젤라틴의 제조 방법.
- 제 1항에 있어서,물로 수세는 온화한 산화 배지에서 수행됨을 특징으로 하는 어류 젤라틴의 제조 방법.
- 제 1항 또는 제 2항에 있어서,어류 껍질은 그 자체로 또는 일부 건조하여, 전체로, 또는 조각의 형태로, 또는 분획으로 갈아서 사용함을 특징으로 하는 어류 젤라틴의 제조 방법.
- 제 1항 또는 제2항에 있어서,온화한 산화 배지는 산화제가 50 내지 1000 ppm(0.005 내지 0.1%)의 농도로 존재하는 산화제의 수용액으로 이루어진 것임을 특징으로 하는 어류 젤라틴의 제조 방법.
- 제 4항에 있어서,산화제는 하이포아염소산염, 특히 하이포아염소산 나트륨 또는 칼륨, 또는 과산화수소에서 선택된 것임을 특징으로 하는 어류 젤라틴의 제조 방법.
- 제 1항, 2항 및 제 5항 중 어느 한 항에 있어서,무기산 또는 유기산이 산처리에 사용됨을 특징으로 하는 어류 젤라틴의 제조 방법.
- 제 6항에 있어서,무기산으로 염산, 황산 또는 인산이, 또는 유기산으로 초산 또는 젖산이 사용됨을 특징으로 하는 어류 젤라틴의 제조 방법.
- 제 1항, 2항, 5항 및 제 7항 중 어느 한 항에 있어서,상기 산이 톤 당 3 내지 20 l 의 비율로 사용됨을 특징으로 하는 어류 젤라틴의 제조 방법.
- 제 1항, 2항, 5항 및 제 7항 중 어느 한 항에 있어서,산 처리는 1 내지 8시간, 바람직하기로는 4시간 수행됨을 특징으로 하는 어류 젤라틴의 제조 방법.
- 제 1항, 2항, 5항 및 제 7항 중 어느 한 항에 있어서,추출은 pH 5 이하, 바람직하기로는 pH 2.5 내지 4.5에서 수행됨을 특징으로 하는 어류 젤라틴의 제조 방법.
- 제 1항, 2항, 5항 및 제 7항 중 어느 한 항에 있어서,추출은 50℃ 이상, 바람직하기로는 55℃ 내지 70℃에서 수행됨을 특징으로 하는 어류 젤라틴의 제조 방법.
- 제 1항, 2항, 5항 및 제 7항 중 어느 한 항에 있어서,추출된 젤라틴 용액의 정제 및 탈미네랄화를 포함하는 공정 또한 포함함을 특징으로 하는 어류 젤라틴의 제조 방법.
- 제 12항 에 있어서,추출된 젤라틴 용액을 규조토 처리하고 여과함을 특징으로 하는 어류 젤라틴의 제조 방법.
- 제 1항, 2항, 5항, 7항 및 제 13항 중 어느 한 항에 있어서,여과된 젤라틴 용액을 이온 교환 수지에서 탈미네랄화하고 pH를 5 내지 7정도로 조정함을 특징으로 하는 어류 젤라틴의 제조 방법.
- 제 1항, 2항, 5항, 7항 및 제 13항 중 어느 한 항에 있어서,여과되고 탈미네랄화된 젤라틴 용액은 진공하에서 농축하여 휘발성 냄새를 제거하고, 응고 및 건조시킴을 특징으로 하는 어류 젤라틴의 제조 방법.
- 제 1항, 2항, 5항, 7항 및 제 13항 중 어느 한 항에 있어서,어류 껍질은, 껍질을 벗긴 후 수세되고 바로 냉동된 신선한 어류 유래의 가공되지 않은 껍질임을 특징으로 하는 어류 젤라틴의 제조 방법.
- 제 16항에 있어서,어류 껍질은 비늘과 지느러미를 가진 어류에서 유래된 것임을 특징으로 하는 어류 젤라틴의 제조 방법.
- 제 17항에 있어서,상기 어류는 참치, 틸라피아, 나일강 농어류, 연어, 혀가자미, 특히 적도 혀가자미, 잉어, 폴락, 메를루사(hake) 및 고등어임을 특징으로 하는 어류 젤라틴의 제조 방법.
- 제 16항에 있어서,어류 껍질은 비늘이 없는 어류에서 유래된 것임을 특징으로 하는 어류 젤라틴의 제조 방법.
- 제 19항에 있어서,상기 어류는 캣피쉬, 특히 채널 캣피쉬, 아프리카해 캣피쉬 또는 북아프리카 캣피쉬임을 특징으로 하는 어류 젤라틴의 제조 방법.
