(冷解凍耐性の採点基準)
1 冷解凍耐性が非常に低い
2 冷解凍耐性が低い
3 冷解凍耐性あり
4 冷解凍耐性がやや高い
5 冷解凍耐性が非常に高い
また、冷凍庫から取出した生の春巻きを、170℃の食用油中に浸漬して、4分30秒間油ちょうし、揚げ春巻きを製造した。
すなわち、サクみが無く、ヒキ(もち感)が強いものを1とし、サクみがありソフトで、ヒキが少ないものを5として、食感がよいものほど点数が増す、5段階で評価を行った。
Claims (7)
- アミロース合成遺伝子Wx-B1、Wx-D1、Wx-A1のうち2つが欠失している小麦由来の低アミロース小麦粉を、全小麦粉原料中に10~40質量%含有することを特徴とする春巻き皮用小麦粉組成物。
- 前記低アミロース小麦粉は、あやひかり、つるぴかり、チクゴイズミから選ばれた少なくとも1種の小麦由来の小麦粉である、請求項1に記載の春巻き皮用小麦粉組成物。
- 前記低アミロース小麦粉以外に、準強力粉及び/又は強力粉を、全小麦粉原料中に10質量%以上、90質量%未満含有する、請求項1又は2記載の春巻き皮用小麦粉組成物。
- 具材を巻いて油ちょうする前の状態で冷凍又は冷蔵される春巻きに適用される、請求項1~3のいずれか1項に記載の春巻き皮用小麦粉組成物。
- 請求項1~3のいずれか1項に記載の春巻き皮用小麦粉組成物を用いてバッター液を調製するバッター調製工程と、前記バッター液を加熱されたドラム又は焼き板の表面に塗布して加熱し、春巻き皮を形成する加熱成形工程とを含むことを特徴とする春巻き皮の製造方法。
- 請求項5の方法で得られた春巻き皮を用いて具材を包み、油ちょう前の状態で冷凍又は冷蔵することを特徴とする春巻きの製造方法。
- 請求項1~3のいずれか1項に記載の春巻き皮用小麦粉組成物を用いて得られた春巻き皮で具材が包まれており、油ちょう前の状態で冷凍又は冷蔵されていることを特徴とする春巻き。
