CONSISTE EN EL TRATAMIENTO DEL ALMIDON, A UN PH ENTRE 3,5 Y 7,0 Y TEMPERATURA COMPRENDIDA ENTRE 50C Y 100C, CON LA ENZIMA ALFA-AMILASA, DURANTE UN TIEMPO SUFICIENTE PARA PRODUCIR UNA DISOLUCION DE HIDROLIZADO DE ALMIDON. LA ENZIMA ALFA-AMILASA SE DERIVA DE UN MICROORGANISMO CORRESPONDIENTE AL GRUPO CLOSTRIDIUM SP. ATCC 39251, ATCC 39252, A LAS CEPAS MUTANTES DE LOS MISMOS, O A UN MICROORGANISMO QUE INCORPORA INFORMACION GENETICA DE LOS CITADOS MICROORGANISMOS, QUE CODIFICA LA PRODUCCION DE UNA ENZIMA DE ALFA-AMILASA. TIENE APLICACIONES PARA LA PRODUCCION DE JARABES QUE CONTIENEN GLUCOSA.
