    In recent years, the interest in natural remedies has increased, so it is important to analyze the plants widely distributed in nature but whose composition is little known. The main objective of the present work is to obtain information based on the profiles of secondary metabolites and antioxidant activity in Lamium album, a very widespread but little studied plant, with the aim of revealing the differences compared to Urtica dioica. First, the optimization of enzymatic extraction assisted by ultrasound was carried out by the Box–Behnken method. The optimized parameters were: concentration of the enzyme—3.3% cellulase, temperature—55 °C, and the extraction time—40.00 min. The efficiency was estimated based on the content of iridoids, the main class of secondary metabolites from Lamium album.     Reported here is a first detailed analysis of the antioxidant activity in traditional fruit-derived distilled alcoholic beverages from Romania (" țuica "). A distinctly highest activity, paralleled by Folin-Ciocalteu data and UV-vis absorbances, was seen in the most common type of such brandy, made of plums; other samples included brandies made of apples, pears, fruit mixtures, wine, and cereals. In fact, the values seen for the plum brandy were, even before maturation with wood, similar to those of commercially-available wood-maturated whisky. Increases of up to one order of magnitude in antioxidant activity were seen in all brandies upon maturation with various types of wood – with mulberry tree by far the most efficient, followed by oak and cherry – and with lowest values seen for acacia. Attempts to identify anticancer activity in concentrated extracts prepared from plum brandy, failed. Copper electron paramagnetic (EPR) signals are shown for the first time in such brandy samples.

    Abstract A high performance thin layer chromatographic method (HPTLC) for fingerprinting and for the antioxidant activity evaluation of twenty-seven Romanian red wines was developed in order to discriminate wines as a function of grape varieties, vintage years and wineries. The chromatographic analysis was performed on silica gel 60F 254 HPTLC aluminum sheets using ethyl acetate:formic acid:acetic acid:water, 20:2:2:4 (v/v/v/v) as mobile phase. Detection was performed under visible and UV light before and after dipping the plates in NP/PEG solutions. The chromatographic fingerprinting method was validated for stability, specificity, precision and robustness according to the general validation procedure of qualitative HPTLC method. The obtained fingerprints are useful for quality control of wines allowing their differentiation according to grape varieties, vintage years and wineries. The antioxidant activity evaluation of wines was performed by digitally processing the images taken after the plate immersion in a methanolic solution of DPPH for 1 s. The antioxidant activity increases in the order Fetească Neagră, Cabernet Sauvignon, and Merlot. The total measured areas indicate that the lowest antioxidant activity corresponds to Fetească Neagră-Serve Ceptura (FN-SC) 2007 wine ( A t = 30 min  = 4865 u.a.) and Merlot-Prince Mircea (M-PM) 2006 wine has the highest antioxidant activity ( A t = 30 min  = 14 463 u.a.).

    It is widely accepted that both endogenous antioxidants and those from the diet play important roles in maintaining health, and acting against various disorders and diseases induced by oxidative stress. Different analytical methods assess the antioxidant content of various free radicals with different chemical, physical and biological properties. Some of these are produced in biological processes that take place in organisms and others are stable free radical reagents, but unfortunately none are standardized. The separation, identification and determination of antioxidant compounds are difficult, especially when simultaneous determination of several is needed. For these purposes a great number of sensitive, selective and accurate analytical methods have been developed based on different determination principles. In this context, knowledge of analytical methods which are applied in the determination of the antioxidant activity of teas is useful; for evaluating their chemical composition, comparing their antioxidant properties, and estimating their influence on metabolic processes in animal and human organisms.

    This article reports the determination of the volatile composition of commercial Romanian wines with the goal of identifying characteristic markers. For this purpose, 27 samples from four wine-producing areas from three consecutive years were investigated. Analysis was performed by gas chromatography–mass spectrometry with liquid–liquid extraction. Forty-eight volatile compounds were identified and characterized as alcohols, ethyl esters, fatty acids, phenyl compounds, aldehydes, ketones, lactones, and terpenes as a percentage of the total area of volatile compounds. The results are discussed in relationship to the grape variety, region, and year of production.

    ABSTRACT Next to water, tea is one of the most consumed beverages all around the world and fruit teas provide a dietary source of biologically active compounds. Many functional foodstuff of fruit origin, including red fruit tea, have entered the markets providing new developments in the domain of quality control and food security scientific research. For this reason, the goal of our study was to establish a method for authentication of 12 commercially available fruit teas (raspberry, strawberry, blueberry, rose hip, wild berry) using HPTLC fingerprinting. The HPTLC fingerprints of red fruit and tea extracts obtained in visible light and in fluorescence at 366 nm after the derivatization with Natural Product/Polyethylene glycol (NP/PEG) reagents indicated different characteristic colored zones allowing a clear differentiation between all teas, in terms of their type and producer. Also, a good correlation between the data from chromatograms and type of teas and the producers, respectively, was obtained.

    ABSTRACT This paper reports a study concerning isotopic ratios (18O/16O) of 27 commercial red wine samples from different areas of Romania produced during 2006, 2007, and 2008. The metal concentrations of the investigated samples were determined by inductively coupled plasma mass spectrometry (ICP-MS). The goal of this study was to analyze and characterize the region and vintage year influences on the isotopic and elemental fingerprints of these wines. The differences in 18O/16O ratios reflect the specific climatic and harvesting condition of each vineyard. Thirty metals with significant concentration were identified, from which potassium was the most abundant (between 142.76–482.56 mg/L). Chromium, varying between 97.38 and 624.78 µg/L, and nickel, 90.60–623.32 µg/L, originated from the technological procedure of winemaking. Traces of Pb, varying between 4.34–35.42 µg/L were also found.

    ABSTRACT High performance thin layer chromatography (HPTLC) can be coupled with spectrometric methods in order to improve the selectivity and sensitivity of component identification. The coupling of HPTLC with EPR involves removing each spot together with the stationary phase from the plate, deposition on the quartz capillary, and analysis. This method is used to separate and identify some nitroxidic derivatives of nicotinic acid and iso-nicotinic acid. The advantage of this method is elimination of the transfer procedure of the substance from the spot, due to the fact that the EPR spectra are recorded directly from the adsorbed-labeled molecules on silica gel. Moreover, this coupling represents a non-destructive method.

Due to growing health concerns, consumers are looking for jams prepared with sweeteners other than white sugar, which could be a good alternative to meet their needs. The aim of this research was to evaluate the influence of sucrose, fructose, erythritol, brown sugar, coconut sugar, stevia and saccharine on the bioaccessibility of vitamin C, anthocyanins andthe antioxidant capacity of lingonberry jams under in vitro gastrointestinal digestion. The vitamin C, total anthocyanin content and antioxidant capacity measured by ABTS and FRAP assays were determined spectrophotometrically. Individual anthocyanins were determined by high performance liquid chromatography.     Ethanolic extracts from seeds and skins of three red grape varieties, namely, 'Cabernet Sauvignon', 'Merlot' and 'Burgund' from a Romanian winery, were prepared by maceration using different temperature conditions. The stable free radicals DPPH (2, 2-diphenyl- 1-picrylhydrazyl) and Tempol (4-hydroxy-2,2,6,6-tetramethylpiperidin-N-oxyl) were used in order to evaluate the antioxidant capacity of the extracts. The variation in time of free radical concentration was followed by double integration of the EPR spectra of the samples obtained after maceration under different conditions (room temperature and intermittent heating). Results showed that the antioxidant capacity depends on the nature of analysed samples (either being seeds or skins) and grape variety. The results also show that the intermittent heating during maceration leads to a decrease of the antioxidant capacity of samples.

G. verum extracts are characterized here using chromatography, where among the rich pool of phenolic acids of flavonoids two known anti-stress modulators, chlorogenic acid and rutin are identified in high quantities.     Cornus species fruits are well known as a rich source of antioxidant compounds responsible for their diverse health benefits. The present study aims to investigate the variation of the total antioxidant capacity of Cornelian cherry (Cornus masL.) fruits during storage, using high-performance thin-layer chromatography (HPTLC) and two spectrophotometric assays based on different mechanisms: the 2,2-azinobis(3-ethylbenzothiazolyne-6-sulphonic acid) radical cation (ABTS+∙) assay and the ferric reducing antioxidant power (FRAP) assay. The fruit extract was stored at room temperature (22°C) for 19 days. No major differences in the total antioxidant capacity were observed during this period, indicating that storage does not have any deleterious effect on the antioxidant properties of the investigated fruits extract.
