Abstract

La presente invencion se refiere a un proceso para la produccion de masa agria, que comprende al menos un compuesto sensible al ácido y otros ingredientes para masa agria, dicho proceso comprende: i) la preparacion de una masa agria no fermentada a partir de al menos: - un compuesto generador de ácido, que proporciona el sabor ácido de a) la masa agria o b) un producto horneado a partir de esta masa agria, sin provocar la inhibicion sustancial del compuesto sensible alácido, presente en la masa agria, y - otros ingredientes para masa agria; y ii) la fermentacion de la masa agria no fermentada.
