Abstract
La presente invención se refiere a un objeto de la presente invención reside en proporcionar un producto fermentado que contiene microorganismos productores de equol en estado de células vivas, por el cual se pueda mantener la capacidad productiva de equol; cuando se produce un material fermentado utilizando un microorganismo productor de equol, con soya en polvo o leche de soya como materias primas: (1) preparando un fermento madre por fermentación en condiciones anaeróbicas, utilizando un microorganismo productor de equol en presencia de una especie de daidzeína a un pH de 5.0 o mayor: (2) preparando un fermento industrial mediante la fermentación en condiciones anaeróbicas utilizando dicho fermento madre, en presencia de una especie de daidzeína, a un pH de 5.0 o mayor y (3) preparando un material fermentado mediante fermentación, empleando el citado fermento industrial en un medio que contenga soya en polvo o leche de soya, se logra la producción de un material fermentado que contiene microorganismos en estado de células vivas, en el cual se mantiene la capacidad productiva de equol.
