Claims (7)
- 물에 침지된 커피 생두에 바실러스 균을 접종한 후 호기발효시키는 단계와;
상기 호기발효된 커피생두에 Weissella confusa 균을 접종한 후 혐기발효시키는 단계;를 포함하는 것을 특징으로 하는 에쿠올이 생성된 발효커피생두의 제조방법.
- 제1항에 있어서,
상기 호기발효된 커피생두에 Weissella confusa 균을 5% 1×107 cfu/mL 접종한 후 37℃에서 48시간동안 혐기발효시키는 것을 특징으로 하는 에쿠올이 생성된 발효커피생두의 제조방법.
- 제2항에 있어서,
상기 바실러스 균이 접종된 커피 생두를 32 내지 42℃에서 8 내지 24시간 동안 호기발효시키는 것을 특징으로 하는 에쿠올이 생성된 발효커피생두의 제조방법.
- 제1항 내지 제3항 중 어느 한 항의 발효커피생두의 제조방법에 의해 제조된 것을 특징으로 하는 에쿠올이 생성된 발효커피생두.
- 제1항 내지 제3항 중 어느 한 항의 발효커피생두의 제조방법에 의해 제조된 발효커피생두로부터 추출된 추출물을 포함하는 것을 특징으로 하는 에쿠올이 함유된 발효커피생두의 추출물.
