Claims (5)
- 가용성의 칼슘염 또는 마그네슘염을 함유하는 수용액에 어육을 세척하여 탈수한 후, 이 탈수된 어육에 식품용 계면활성제 또는 식품용 계면활성제와 유지를 첨가 혼합하여 동결시키는 것을 특징으로 하는 다져진 냉동어육의 제조방법.
- 제 1 항에 있어서, 계면활성제가 글리세린 지방산 에스테르, 당 지방산 에스테르, 소르비탄 지방산 에스테르, 프로필렌 글리콜 에스테르, 폴리옥시에틸렌 소르비탄 지방산 에스테르 및 이것들의 혼합물로 된 무리중에서 선택되는 다져진 냉동어육의 제조방법.
- 제 1 항에 있어서, 칼슘염 또는 마그네슘염의 용액중에서의 이온강도(μ)가 0.0025 내지 0.05인 다져진 냉동어육의 제조방법.
- 제 1 항에 있어서, 칼슘염 또는 마그네슘염이 염화물, 황산염, 질산염, 아세트산염, 락트산염 및 이것들의 혼합물로 된 무리중에서 선택되는 다져진 냉동어육의 제조방법.
- 제 1 항에 있어서, 세척수가 부가적으로 염화물, 질산염, 탄산염, 중탄산염, 인산염, 유기산염 및 이것들의 혼합물로부터 선택되는 알칼리금속염을 함유하는 다져진 냉동어육의 제조방법.
