Abstract
본 발명은, 분말유지로서, 중쇄지방산 트리글리세리드, 옥테닐호박산 처리 전분 혼합물, 및 덱스트린을 포함하고, 상기 옥테닐호박산 처리 전분 혼합물은, 10질량% 수용액의 25℃에서의 점도가 30mPa·s 미만인 제1 옥테닐호박산 처리 전분과, 10질량% 수용액의 25℃에서의 점도가 30mPa·s 이상인 제2 옥테닐호박산 처리 전분을 포함하고, 상기 제2 옥테닐호박산 처리 전분의 함유량은, 상기 옥테닐호박산 처리 전분 혼합물 전체에 대하여 12질량% 이상 45질량% 이하이고, 상기 덱스트린의 덱스트로오스 당량은 10 이상이며, 상기 중쇄지방산 트리글리세리드의 함유량은, 상기 분말유지 전체에 대하여 65질량% 이상 85질량% 이하인 분말유지를 제공한다.

Claims (7)
- 분말유지로서,
중쇄지방산 트리글리세리드, 옥테닐호박산 처리 전분 혼합물, 및 덱스트린을 포함하고,
상기 옥테닐호박산 처리 전분 혼합물은, 10질량% 수용액의 25℃에서의 점도가 30mPa·s 미만인 제1 옥테닐호박산 처리 전분과, 10질량% 수용액의 25℃에서의 점도가 30mPa·s 이상인 제2 옥테닐호박산 처리 전분을 포함하고,
상기 제2 옥테닐호박산 처리 전분의 함유량은, 상기 옥테닐호박산 처리 전분 혼합물 전체에 대하여 12질량% 이상 45질량% 이하이고,
상기 덱스트린의 덱스트로오스 당량은 10 이상이며,
상기 중쇄지방산 트리글리세리드의 함유량은, 상기 분말유지 전체에 대하여 65질량% 이상 85질량% 이하인 분말유지. - 제1항에 있어서,
상기 덱스트린의 함유량은, 상기 분말유지 전체에 대하여 5.0질량% 이상 30질량% 이하인 분말유지. - 제1항 또는 제2항에 있어서,
상기 옥테닐호박산 처리 전분 혼합물의 함유량은, 상기 분말유지 전체에 대하여 5.0질량% 이상 20질량% 이하인 분말유지. - 제1항 내지 제3항 중 어느 한 항에 있어서,
상기 중쇄지방산 트리글리세리드는, 탄소수가 8, 10, 및 12인 포화 지방산 중 어느 하나 이상을 구성 지방산으로서 포함하는 분말유지. - 제1항 내지 제4항 중 어느 한 항에 기재된 분말유지를 포함하는 음식품.
- 중쇄지방산 트리글리세리드, 옥테닐호박산 처리 전분 혼합물, 덱스트린, 및 물을 포함하는 수중유형 유화액을 조제하는 공정과,
상기 수중유형 유화액을 건조 분말화함으로써 분말유지를 조제하는 공정, 을 포함하고,
상기 옥테닐호박산 처리 전분 혼합물은, 10질량% 수용액의 25℃에서의 점도가 30mPa·s 미만인 제1 옥테닐호박산 처리 전분과, 10질량% 수용액의 25℃에서의 점도가 30mPa·s 이상인 제2 옥테닐호박산 처리 전분, 을 포함하고,
상기 제2 옥테닐호박산 처리 전분의 함유량은, 상기 옥테닐호박산 처리 전분 혼합물 전체에 대하여 12질량% 이상 45질량% 이하이고,
상기 덱스트린의 덱스트로오스 당량은 10 이상이며,
상기 중쇄지방산 트리글리세리드의 함유량은, 상기 분말유지 전체에 대하여 65질량% 이상 85질량% 이하인, 분말유지의 제조방법. - 제6항에 있어서,
상기 수중유형 유화액의 유적의 메디안 경은, 0.3㎛ 이상 1.5㎛ 이하인 분말유지의 제조방법.
