Description
Claims (16)
- 지방, 물, 당, 유화제 및 전분 성분을 포함하는 실질적으로 무단백질인 휩가능한 수중유형 식품으로서: 상기 전분은 0.1~4%의 범위로 존재하고 옥테닐 숙신산 무수물(NOSA) 전분 및 친수성 전분을 포함하고; 상기 NOSA 전분 및 상기 친수성 전분은 1:2~2:1의 비로 존재하며, 상기 식품은 1년 이상 동안 냉동 저장될 수 있는 것을 특징으로 하는 휩가능한 수중유형 식품.
- 제 1 항에 있어서,상기 NOSA 전분 및 상기 친수성 전분의 비가 1:1.5인 것을 특징으로 하는 휩가능한 수중유형 식품.
- 제 1 항에 있어서,상기 식품의 pH가 2.5~8인 것을 특징으로 하는 휩가능한 수중유형 식품.
- 제 3 항에 있어서,상기 식품의 pH가 3~4.6인 것을 특징으로 하는 휩가능한 수중유형 식품.
- 제 1 항에 있어서,과일 조각 또는 과즙을 더 포함하는 것을 특징으로 하는 휩가능한 수중유형 식품.
- 제 5 항에 있어서,상기 과일 조각 또는 과즙은 25wt% 이하이고, 상기 pH는 3~4.6인 것을 특징으로 하는 휩가능한 수중유형 식품.
- 제 1 항에 있어서,하나 이상의 산미료를 더 포함하는 것을 특징으로 하는 휩가능한 수중유형 식품.
- 제 1 항에 있어서,총 고형물이 55~75wt%인 것을 특징으로 하는 휩가능한 수중유형 식품.
- 제 1 항에 있어서,총 고형물이 35~54wt%인 것을 특징으로 하는 휩가능한 수중유형 식품.
- 제 8 항에 있어서,수분활성도가 0.8~0.9인 것을 특징으로 하는 휩가능한 수중유형 식품.
- 제 9 항에 있어서,수분활성도가 0.91~0.98인 것을 특징으로 하는 휩가능한 수중유형 식품.
- 제 1 항에 있어서,상기 식품의 점도가 400~1,000cP인 것을 특징으로 하는 휩가능한 수중유형 식품.
- 제 1 항에 기재된 휩가능한 수중유형 식품으로부터 제조된 것을 특징으로 하는 휩된 당과.
- 제 13 항에 있어서,150~500%의 오버런을 갖는 것을 특징으로 하는 휩가능한 당과.
- 제 1 항에 있어서,7일 이하 동안 25℃ 이하의 온도에서 진열될 수 있는 것을 특징으로 하는 휩가능한 당과.
- 제 13 항에 있어서,상기 휩가능한 식품은 상기 휩가능한 식품의 25wt% 이하로 존재하는 과일 조각 또는 과즙을 더 포함하고 상기 휩가능한 식품의 pH는 3~4.6인 것을 특징으로 하는 휩가능한 당과.
