Claims (14)
- 약 80 % 이상의 1차 벽으로 이루어진 셀로부터 수득되는 50 % 이하의 결정화도를 갖는 본질적으로 무정형인 셀룰로스 미세피브릴과 하나 이상의 폴리히드록실화 화합물의 건조 형태 조합물을, 식품 제형물 총 중량에 대해 0 중량% 초과 및 20 중량% 미만으로 함유하는, 식품 제형물용 첨가제.
- 제 1 항에 있어서, 미세피브릴이 카르복실산 및 폴리사카라이드 산의 단독으로 또는 혼합물로 표면 충전된 것을 특징으로 하는 첨가제.
- 삭제
- 제 1 항 또는 제 2 항에 있어서, 폴리히드록실화 화합물 함량이 상기 폴리히드록실화 화합물 및 미세피브릴에 대해 5 내지 50 중량% 인 것을 특징으로 하는 첨가제.
- 제 1 항 또는 제 2 항에 있어서, 폴리히드록실화 화합물이 탄수화물 및 그의 유도체, 및 폴리올로부터 선택되는 것을 특징으로 하는 첨가제.
- 제 5 항에 있어서, 폴리히드록실화 화합물이 선형 또는 시클릭 C3-C6모노사카라이드, 올리고사카라이드, 폴리사카라이드 및 지방산 수크로에스테르와 같은 그의 지방 유도체, 탄수화물 알콜 및 이들의 혼합물인 것을 특징으로 하는 첨가제.
- 제 6 항에 있어서, 폴리히드록실화 화합물이 카르복시메틸셀룰로스인 첨가제.
- 제 6 항에 있어서, 폴리히드록실화 화합물이 잔탄검, 숙시노글리칸, 카라기난 및 알기네이트로부터 단독으로 또는 혼합물로서 선택된 하나 이상의 음이온성 폴리사카라이드인 것을 특징으로 하는 첨가제.
- 제 6 항에 있어서, 폴리히드록실화 화합물이 갈락토만난, 전분 및 그의 비이온성 유도체, 및 비이온성 셀룰로스 유도체로부터 선택된 하나 이상의 비이온성 폴리사카라이드인 것을 특징으로 하는 첨가제.
- 제 6 항에 있어서, 폴리히드록실화 화합물이 소르비톨 및 수크로스로부터 선택된 하나 이상인 것을 특징으로 하는 첨가제.
- 제 1 항 또는 제 2 항에 있어서, 미세피브릴이 화학식 (R1R2N)COA {식 중, R1또는 R2는 동일 또는 상이할 수 있으며, 수소 또는 C1-C10알킬 라디칼이며, A 는 수소, C1-C10알킬 라디칼, 또는 기 R'1R'2N (여기서, R'1및 R'2는 동일 또는 상이할 수 있으며, 수소 또는 C1-C10알킬 라디칼을 나타낸다) 를 나타낸다} 의 화합물들로부터 선택된 하나 이상의 보조첨가제를 함유하는 것을 특징으로 하는 첨가제.
- 제 1 항 또는 제 2 항에 있어서, 하나 이상의 폴리히드록실화 화합물 및 선택적으로 하나 이상의 보조첨가제와 조합된 건조 형태의 셀룰로스 미세피브릴 양이 식품 제형물 총 중량에 대해 0 중량% 초과 및 20 중량% 이하인 것을 특징으로 하는 첨가제.
- 50 % 이하의 결정화도를 갖는 본질적으로 무정형인 셀룰로스 미세피브릴과 하나 이상의 폴리히드록실화 화합물의 건조 형태 조합물을 함유하는, 식품 제형물내에서의 조직화제.
- 50 % 이하의 결정화도를 갖는 본질적으로 무정형인 셀룰로스 미세피브릴과 하나 이상의 폴리히드록실화 화합물의 건조 형태 조합물을 함유하는, 식품 제형물 내에서 넘쳐흐름(overrun) 상태를 일으키기 위한 제제.
