Abstract
PURPOSE: To prevent the collapse in boiling and prepare a packed food having improved keeping quality, by sealing a material in a raw state introduced into a tray and a seasoning agent with air contained therein in a plastic film, boiling, seasoning and sterilizing the material in a sterilizing retorting vessel of the constant differential pressure type in a short time.
CONSTITUTION: A raw material, e.g. a raw fish, and a seasoning solution are introduced into a tray, and sealed in a heat-resistant plastic film with air contained therein. The packed material is then contained in a sterilizing retorting vessel of the constant differential pressure type. Pressurized hot water preheated to 100W120°C in the upper vessel is dropped at a time to heat the material kept at the temperature for about 5min, boil, season and sterilize the material. After the heating, the material is quickly cooled for about 10min to about room temperature. Thus, the aimed packed food is obtained without the collapse in boiling, softening of the material and deteriorating the quality and taste thereof.
