Abstract
PURPOSE: To provide a soft cooked rice, storable for a long term, and usable for food without heating, by sealing up a soft rice cooked at a weight ratio between rice and water of 1:(1.5W3.6), and sterilizing the resultant cooked rice under a constant differential pressure with ingredients, a seasoning and lipid.
CONSTITUTION: A soft rice 4 cooked at a weight ratio between rice and water of 1:(1.5W3.6) with a larger amount of water than the conventional rice cooking, ingredients 5, e.g. a SHIITAKE mushroom fully impregnated with water or vegetable, salt of sugar, and a lipid, e.g. a soup of bones after removing the chicken or salad oil are contained in a given proportion in a container 2 and sealed up with a lid 3 with air contained therein. The ingredients 5 may be previously mixed with the rice and cooked. The rice 4 in the container 2 is heated with steam at 120W130°C in a processing cooker and sterilized by a constant differential pressure by using the pressure difference between the interior and the exterior of the container 2. The container 2 is then taken out after cooling to give the aimed product.
