Abstract

PURPOSE: A number of KONNYAKU strings are bound and adhered to produce a food product of KONNYAKU having good texture and good taste, because the product is well soaked with seasoning solution.
CONSTITUTION: A swollen KONNYAKU powder is mixed with appropriate amounts of alkali and water with a mixer into a slurry. The resultant slurry is extruded through nozzles into a number of fine strings of KONNYAKU. These fine strings are dipped in a hot water tank at a pH of 10W11.5 and a temperature of 70W75°C for about 1min to give half-coagulated KONNYAKU strings of which only the core part is coagulated. Immediately, the half-coagulated strings are rapidly cooled in a cold water tank and stored in a prescribed coagulation state. Then, strings are piled in a mold in the same direction and pressed from the top for a few hours to tens hours to adhere not coagulated surfaces to one another, thus being formed integrally, while the string form is kept.
