Abstract

PURPOSE: A gelling material and food material are sent into a heating tube in multiple layers, heated with microwaves so that the gelling material is made to gel, thus forming both materials into the cross section of the heating tube to produce a good-taste and multiple-layered paste food.
CONSTITUTION: Fish or meat is used as a gelling material, cut into fine pieces and flavorings and seasonings are added thereto. The mixture is deaerated and contained in the first hopper 1. Other materials, e.g., finely cut vegetables, are placed in the second hopper 2. Both materials in the hoppers are sent with pumps 3 and 4 through mixer 5 into heating tube 7 that passes through heating chamber 6 and is made of a material transmitting microwaves, resulting in multiple layers. Both materials are heated with microwaves to an appropriate temperature to change the gelling material into a gel and boil other ingredients and they are cooled to produce a multiple-layered paste food product with the same shape as the cross section of the heating tube.
