Abstract
PURPOSE: To prepare a mixture of "konjak" (gelled paste made from the starch of the devil's tongue) and fish paste, having excellent taste and pleasant to the tooth and palate, by mixing pasty raw material of "konjak" with ground meat of white- meat fish, and coagulating the mixture.
CONSTITUTION: Starch of the devil's tongue is added slowly to 20W30 times volume of cold or hot water at ≤75°C, stirred, and left to stand for about 40W60min to obtain a pasty raw material of "knojak". On the other hand, the meat of white- meat fish is ground, washed thoroughly with water, dissolved in about 2 times volume of water, and stirred to obtain a pasty raw material of ground meat. One part of the pasty fish meat is mixed with 1W4pts. of the pasty raw material of "konjak", and the mixture is added with limewater, formed, and coagulated with heat.
