Abstract
PURPOSE: Cheese is dispersed in water to produce a cheese beverage or sauce with a unique taste and high nutritions.
CONSTITUTION: Water is heated up to 85W95°C and cheese is added thereto by 5W60, preferably 10W40wt% based on the total amount. Then, they are strongly and thoroughly stirred with a stirrer to disperse cheese in water uniformly and cooled, then the dispersion is bottled. Skim milk, full cream milk or raw milk or raw milk may be added to the water or a dispersant may be added thereto.
