PURPOSE: A microorganism belonging to Enterbacter and being capable of producing xanthine oxidase is cultured to produce xanthine oxidase.
CONSTITUTION: A microorganism belonging to Enterobacter and being capable of producing xanthine oxidase, such as Enterobacter cloacae KYO3066 (FERM-4077), is cultured in enriched medium at a pH of 6.0W9.5 by shaking or aeration to form xanthine oxidase in the culture, which is collected.
