項13. (A1成分)酢酸プロピル、(A2成分)2メチル酪酸エチル、(A3成分)酢酸ヘキシル、(A4成分)酢酸メチル、及び(A5成分)イソ酪酸エチルからなる群より選択される少なくとも1種の香気成分を配合することを含む、酢酸含有飲食品の酢酸臭、刺激臭、及びムレ臭からなる群より選択される少なくとも1種を抑制する方法.
項14. (A1成分)酢酸プロピル、(A2成分)2メチル酪酸エチル、(A3成分)酢酸ヘキシル、(A4成分)酢酸メチル、及び(A5成分)イソ酪酸エチルからなる群より選択される少なくとも1種の香気成分を含有する、酢酸含有飲食品の酢酸臭、刺激臭、及びムレ臭からなる群より選択される少なくとも1種の抑制剤.
加えたもの又はこれらに水、食塩、ぶどう等の果実、野菜、卵及びその加工品、砂糖類、食用油脂、乳及び乳製品等を加えたものを練り合わせ、発酵させたもの(以下「パン生地」という。)を焼いた、水分が10%以上の食品である。パン類として、具体的には、例えばパン生地を食パン型(直方体又は円柱状の焼型)に入れて焼いた食パンや、あん、クリーム、ジャム類、食用油脂等をパン生地で包み込み、若しくは折り込み、又はパン生地の上部に乗せたものを焼いた菓子パン等が挙げられる。
まず、各評価対象成分の希釈液を調製した。70%エタノール水溶液に、(A1成分)酢酸プロピル(n-Propyl acetate、東京化成工業社製 純度98%、CAS#:109-60-4)、(A2成分)2メチル酪酸エチル(Butanoic acid, 2-methyl-, ethyl ester、東京化成工業社製 純度98%、CAS#:7452-79-1)、(A3成分)酢酸ヘキシル(Acetic acid, hexyl ester、東京化成工業社製 純度99%、CAS#:142-92-7)、(A4成分)酢酸メチル(Acetic acid, methyl ester、シグマアルドリッチジャパン社製 純度99%、CAS#:79-20-9)、又は(A5成分)イソ酪酸エチル(Propanoic acid, 2-methyl-, ethyl ester、東京化成工業社製 純度99%、CAS#:97-62-1)を添加し、十分に攪拌して50,000ppmの溶液を調製した。得られた溶液をイオン交換水で希釈して、各評価対象成分の希釈液を調製した。
識別試験1)五味(甘味:砂糖の味、酸味:酒石酸の味、旨味:グルタミン酸ナトリウムの味、塩味:塩化ナトリウムの味、苦味:カフェインの味)について、各成分の閾値に近い濃度の水溶液を各1つずつ作製し、これに蒸留水2つを加えた計7つのサンプルから、それぞれの味のサンプルを正確に識別する味質識別試験。
識別試験2)濃度がわずかに異なる5種類の食塩水溶液、酢酸水溶液の濃度差を正確に識別する濃度差識別試験。

表10に示す組成に従って原料を配合し、酢酸、イソ吉草酸、A1成分、A2成分、A3成分、A4成分、及びA5成分(試験例1と同じものを使用した。)を表11に記載の含有量となるように適宜添加して、20℃で均一になるよう十分に攪拌混合した後、90℃で120秒の殺菌処理を行い、ボトル(150ml容量のガラス瓶)に充填して、飲料(実施例114〜124)を調製した。一方で、評価対象成分を添加しない以外は実施例114〜124と同配合のコントロール(対照試験液)とする飲料を調製した。
サンプルは、酢酸の濃度が100mg%付近になるように超純水で希釈し、以下の条件に従って、高速液体クロマトグラフィー(HPLC)を用い、酢酸のピーク面積を分析した。また、超純水で希釈した100mg%の酢酸を、標品サンプルとして同様に分析し、外部標準法により実施例とコントロールの各飲料サンプルの酢酸の含有量を算出した。

・検出:電気伝導度検出器。
サンプルは、イソ吉草酸の濃度が10mg%付近になるように超純水で希釈し、上記酢酸の測定同様、イソ吉草酸のピーク面積を分析した。また、超純水で希釈した10mg%のイソ吉草酸を、標品サンプルとて同様に分析し、外部標準法により各サンプルのイソ吉草酸の含有量を算出した。
〔1〕成分の分離濃縮方法
以下の条件に従って、成分の分離濃縮を行った。
サンプルは100gを1Lバイアルに測り取り、密封した後40℃で30min予備加熱をした。その後、バイアル中の気相をサンプルとして200mlを濃縮装置に導入した。

以下の条件に従ってガスクロマトグラフ法及び質量分析法を用い、各成分のピーク面積を分析した。

・温度条件:35℃(5min)保持→220℃まで3℃/min昇温→5分間保持
<質量分析条件>
・測定機器:Agilent 5977B MSD(Agilent Technologies社製)
・イオン化方式:EI
・測定モード:SCAN
無水エタノールで希釈した濃度既知の各成分(配合に使用したものと同一のもの)を、標品サンプルとして分析し、検出されたピーク面積をもとに検量線を作成した。分析サンプルの分析結果を検量線にあてはめ、含有量を算出した。なお、コントロールの飲料サンプル中には、評価対象成分は検出限界以下、であることを確認した。
表12に示す組成に従って原料を配合し、酢酸、イソ吉草酸、A1成分、A2成分、A3成分、A4成分、及びA5成分(試験例1と同じものを使用した。)を表13に記載の含有量となるように適宜添加して、20℃で均一になるよう十分に攪拌混合した後、ボトル(360ml容量のガラス瓶)に充填して、食品(調味料及び菓子:実施例125〜131)を調製した。一方で、評価対象成分を添加しない以外は実施例125〜131と同配合のコントロール(対照試験品)とする食品を調製した。実施例及びコントロールの食品サンプル中の酢酸、イソ吉草酸、A1成分、A2成分、A3成分、A4成分、及びA5成分それぞれの含有量は、試験例2と同様にして測定した。

- 酢酸を含有量が0.02w/v%以上になるように配合すること、並びに(A1成分)酢酸プロピル、(A2成分)2メチル酪酸エチル、(A3成分)酢酸ヘキシル、(A4成分)酢酸メチル、及び(A5成分)イソ酪酸エチルからなる群より選択される少なくとも1種の香気成分を合計含有量が0.005ppb以上になるように、且つ前記A4成分及び前記A5成分からなる群より選択される少なくとも1種の香気成分を(要件4b)酢酸濃度値(w/v%)に対する前記A4成分の濃度値(ppb)の比(A4成分の濃度値(ppb)/酢酸濃度値(w/v%))が0.3〜20000であること、及び(要件5b)酢酸濃度値(w/v%)に対する前記A5成分の濃度値(ppb)の比(A5成分の濃度値(ppb)/酢酸濃度値(w/v%))が0.03〜20000であることからなる群より選択される少なくとも1種の要件を満たすように配合することを含む、酢酸臭、刺激臭、及びムレ臭からなる群より選択される少なくとも1種が低減された酢酸含有飲食品の製造方法。
- (A1成分)酢酸プロピル、(A2成分)2メチル酪酸エチル、(A3成分)酢酸ヘキシル、(A4成分)酢酸メチル、及び(A5成分)イソ酪酸エチルからなる群より選択される少なくとも1種の香気成分を合計含有量が0.005ppb以上になるように、且つ前記A4成分及び前記A5成分からなる群より選択される少なくとも1種の香気成分を(要件4b)酢酸濃度値(w/v%)に対する前記A4成分の濃度値(ppb)の比(A4成分の濃度値(ppb)/酢酸濃度値(w/v%))が0.3〜20000であること、及び(要件5b)酢酸濃度値(w/v%)に対する前記A5成分の濃度値(ppb)の比(A5成分の濃度値(ppb)/酢酸濃度値(w/v%))が0.03〜20000であることからなる群より選択される少なくとも1種の要件を満たすように配合することを含む、酢酸含有飲食品の酢酸臭、刺激臭、及びムレ臭からなる群より選択される少なくとも1種を抑制する方法。
- (A1成分)酢酸プロピル、(A2成分)2メチル酪酸エチル、(A3成分)酢酸ヘキシル、(A4成分)酢酸メチル、及び(A5成分)イソ酪酸エチルからなる群より選択される少なくとも1種の香気成分を含有し、前記A4成分及び前記A5成分からなる群より選択される少なくとも1種の香気成分を含有し、酢酸含有飲食品中の前記香気成分の合計含有量が0.005ppb以上になるように、且つ酢酸含有飲食品において(要件4b)酢酸濃度値(w/v%)に対する前記A4成分の濃度値(ppb)の比(A4成分の濃度値(ppb)/酢酸濃度値(w/v%))が0.3〜20000であること、及び(要件5b)酢酸濃度値(w/v%)に対する前記A5成分の濃度値(ppb)の比(A5成分の濃度値(ppb)/酢酸濃度値(w/v%))が0.03〜20000であることからなる群より選択される少なくとも1種の要件を満たすように用いるための、酢酸含有飲食品の酢酸臭、刺激臭、及びムレ臭からなる群より選択される少なくとも1種の抑制剤。
