Description
大麦の配合割合を表1に示すように変えて5種類の液体培地を調製し、それぞれの液体培地で麹菌を培養して麹菌培養物を製造した。
実施例1において、大麦を2%(w/vol)加えて調製した液体培地で培養して得られた麹菌培養物(グルコアミラーゼが増強された培養物)と大麦を8%加えて調製した培地で培養して得られた麹菌培養物(耐酸性α−アミラーゼが増強された培養物)とを混合した液体麹を用いて焼酎製造を行った。
Claims (9)
- 発酵飲食品製造に用いられる液体麹の製造方法であって、麦が1%(w/vol)以上4%(w/vol)以下添加された液体培地で培養して得られた第1の白麹菌培養液と、麦が4%(w/vol)以上20%(w/vol)以下添加された液体培地で培養して得られた第2の白麹菌培養液とを混合する液体麹の製造方法。
- 前記液体培地は、主原料が穀類および/または芋類である請求項1に記載の液体麹の製造方法。
- 前記第2の白麹菌培養液は、培養中にクエン酸が生成、蓄積されているものである請求項1または2に記載の液体麹の製造方法。
- 請求項1から3いずれか1項に記載の方法で得られた前記液体麹を用いて発酵飲食品を製造する発酵飲食品の製造方法。
- 発酵飲料の製造は、全工程が液相で行なわれる請求項4に記載の発酵飲食品の製造方法。
- 発酵飲料の製造は、外界との遮蔽状態が保たれた状態の液相で行なわれる請求項4または5に記載の発酵飲食品の製造方法。
- 発酵飲料の製造は、前記液体麹に掛け原料を仕込んで一次もろみを製造する請求項4から6いずれか記載の発酵飲食品の製造方法。
- 前記発酵飲食品が、焼酎である請求項4から7いずれか記載の発酵飲食品の製造方法。
- 麦が1%(w/vol)から4%(w/vol)添加された液体培地で培養して得られた第1の白麹菌培養液と、麦が4%(w/vol)から20%(w/vol)添加された液体培地で培養して得られた第2の白麹菌培養液と、を有する発酵飲食品用の液体麹のセット。
