Abstract
Description
乾燥物を73〜77℃の温水に9〜11秒浸漬後、幅1mm・長さ3cmのくさび型プランジャを用いて測定した破断荷重が25N以下である凍り豆腐。
温度20〜50℃、風速1〜4m/secの乾燥条件で凍り豆腐製造工程における乾燥工程を行う凍り豆腐の製造方法。
前記乾燥工程を行う前の凍り豆腐原料に対して着味剤を添加した後に前記乾燥工程を行う[2]の凍り豆腐の製造方法。
製造した凍り豆腐の乾燥物を73〜77℃の温水に9〜11秒浸漬後、幅1mm・長さ3cmのくさび型プランジャを用いて測定した破断荷重が25N以下である[2]又は[3]の凍り豆腐の製造方法。
Claims (4)
- 乾燥物を73〜77℃の温水に9〜11秒浸漬後、幅1mm・長さ3cmのくさび型プランジャを用いて測定した破断荷重が25N以下である凍り豆腐。
- 温度20〜50℃、風速1〜4m/secの乾燥条件で凍り豆腐製造工程における乾燥工程を行う凍り豆腐の製造方法。
- 前記乾燥工程を行う前の凍り豆腐原料に対して着味剤を添加した後に前記乾燥工程を行う請求項2記載の凍り豆腐の製造方法。
- 製造した凍り豆腐の乾燥物を73〜77℃の温水に9〜11秒浸漬後、幅1mm・長さ3cmのくさび型プランジャを用いて測定した破断荷重が25N以下である請求項2又は3記載の凍り豆腐の製造方法。
