Radio-frequency dielectric heating apparatus comprises a pair of heating electrodes and a variable capacitance in series therewith, the variable capacitance consisting of one of the electrodes or a fixed plate adjacent to and electrically coupled to that electrode, and a movable plate adjustable to vary its spacing from that electrode or fixed plate by rotation of one member of a screw-threaded connection through which the adjustable plate is mounted in the apparatus. Fig. 2 shows a cavity oscillator arrangement as described in Specification 877,014. The output of the oscillator is conveyed through strips 15 to a conducting plate 16 which has a central aperture having an internally threaded bush 17 thereunder. A threaded spindle 18 is fixed to a circular plate 19, which forms with the fixed bottom electrode 20 an adjustable capacitance by means of which the voltage between electrodes 20, 21 is adjustable to obtain maximum power transfer to the load. Plate 19 is electrically connected to plate 16 by phosphor bronze contact springs 22 in the form of resilient hoops. Spindle 18 may carry a scale.
