Abstract

Flakes of dehydrated cooked potato which reconstitute to mashed potato with mealy texture and without starchy flavour are made by incorporating in cooked, mashed potato a monoester of glycerol with a saturated higher fatty acid, e.g. glyceryl monostearate or monopalmitate, in an amount of 1-5% of the potato solids, drying a film of the mixture on a heated surface, and flaking the dried film. Examples are of stirring a 95% monoglyceride, molecularly distilled glyceryl monoester of fully hydrogenated lard, non-fat milk solids, a sodium sulphite and sodium bisulphite solution and an antioxidant containing butyl hydroxy-anisole and butyl hydroxytoluene into a mash from cooked potato slices, drying the mixture on a hot drum to thin sheets and comminuting the sheets.
