Abstract

The production of dehydrated cooked potatoes comprising mixing and equilibrating dehydrated potato flakes and an edible, water-containing material to form subdivided hydrated material of moisture content from 25-50% by weight and drying the subdivided hydrated material. The edible, water-containing material is exemplified by water and by cooked potatoes. The dehydrated flakes may be hydrated to 36-45% moisture and dried to a non-flaky product or may be hydrated to 25-35% moisture and dried to a product consisting predominantly of small flakes. Glyceryl monopalmitate, butyl hydroxy-anisole and toluene, a sodium sulphite-bisulphite mixture, and skim milk solids are incorporated in potato materials of the examples.
