Abstract
A free-flowing powdered sugar, readily dispersible in water without lumping, is made by moistening individual particles of a powder comprising powdered sugar sufficiently to render them sticky and so produce moist random aggregates of size substantially greater than that of the individual particles, and then drying the aggregates, e.g. to moisture content 4-15%. The sugar may be sucrose, dextrose, lactose or a mixture of sucrose and corn syrup solids. The initial powder may contain brown sugar, e.g. may be 60-90% of brown sugar, dried and screened, with 40-10% os sucrose, and such a powder may contain 3%, based on the sucrose, of powdered maize starch.
