Abstract

Bread; coating bakers' goods.-Dough pieces are greased prior to placing in the baking-tins by passing through a stationary receptacle of hopper or trough shape having interior surfaces fitted with oil-absorbent material, and is supplied with oil from a container above. In the form shown in Fig. 2, the hopper A has fixed sides lined with felt &c. a and a movable bottom of stiff felt flaps or in the form of counterweighted flaps a<1> lined with felt as shown, the felt being kept moist with oil, such as cotton-seed oil or olive oil, by means of a perforated pipe C' leading from a container above. The greased dough lumps may drop on to a flat board or into a trough where they are retained till wanted. In the modification shown in Fig. 3, the dough receptacle is in the form of a trough A into which the dough lumps are placed by hand or dropped from a dough-moulding machine and which is fitted with oiled absorbent pads a<2> at the sides. The inclination of the trough may be adjustable.
