Abstract

L'invention décrit un perfectionnement au séchage d'une matière alimentaire par de l'air chauffé directement à la flamme. On alimente le brûleur avec un mélange combustible contenant une quantité stoechiométrique d'air, pour éviter l'emploi de l'air de séchage pour la combustion. Le brûleur fournit assez de chaleur pour le séchage de la matière alimentaire, mais pas plus de 200 000 kilocalories par heure par 30,5 cm linéaires de ce brûleur. Un écran de protection entoure le brûleur pour éviter cette introduction inopportune d'air dans la flamme. Ces mesures, avec le réglage de la vitesse de l'air de séchage, diminuent beaucoup la présence de produits de combustion dans l'air de séchage et donc dans les matières à sécher, notamment des matieres protéiques.
