COMO INGREDIENTE DE LA MASA SE INCLUYE UNA LEVADURA (BICARBONATO DE AMONIO) ACTIVADA POR CALOR, A UNA TEMPERATURA DE 51,5 A 65,5JC. LA MASA A BASE DE HARINA SE CONCRETA EN UNA MASA DE BOLLO EDULCORADA, QUE INCLUYE HARINA, AGUA (EN UN CONTENIDO DE HUMEDAD CERCANO AL 6% EN PESO), GRASAS Y AROMAS. PUEDE AÑADIRSE UNA SEGUNDA LEVADURA, FORMADA POR BICARBONATO DE SODIO Y UN ACIDO ELEVADOR, ASI COMO AGENTES HUMECTANTES DEL TIPO DE LA FRUCTOSA O DEXTROSA.
