Abstract
Un procedimiento para preparar un producto de panadería que tiene una pluralidad de partículas comestibles sobre una superficie superior de dicho producto de panadería, comprendiendo dicho procedimiento las etapas: (i) formar una rodaja de masas de una masa de panadero cruda que es una masa de galleta, que comprende: (a) grasa en una cantidad del aproximadamente 15 al aproximadamente 20 % en peso de la masa; (b) azúcar en una cantidad del aproximadamente 25 al aproximadamente 35 % en peso de la masa; (c) harina en una cantidad del aproximadamente 30 al aproximadamente 40 % en peso de la masa; (d) huevo o sustituto de huevo en una cantidad del aproximadamente 0 al aproximadamente 10 % en peso de la masa; (e) al menos un agente de levadura; y (f) sal; (ii) depositar dicha rodaja de masas sobre una superficie de transporte que tiene partículas comestibles dispuestas sobre la misma, de forma que dicha pluralidad de partículas comestibles son incorporadas sobre una superficie de dicha rodaja demasa; (iii) invertir dicha rodaja de masa, de forma que las partículas comestibles incorporadas se encuentren sobre una superficie superior de dicha rodaja de masa; y (iv) hornear opcionalmente dicha rodaja de masa para formar un producto horneado que tenga una pluralidad de partículas comestibles sobre la superficie superior; en el que cuando dicho producto de panadería es horneado, dicho producto de panadería tiene una dimensión final en una dirección transversal que es, al menos, 1, 75 veces la dimensión inicial en la dirección transversal de la rodaja de masa.
