背景技术
高甘油三酯血症(hypertriglyceridemia,HTG)是一种异族性甘油三酯蛋白合成或降解障碍,使血中甘油三酯含量增高。高甘油三酯血症,可以使脂质在血管壁上沉积,渐渐形成小斑块,斑块逐渐扩大,使血管内径变小,血流缓慢,加速了堵塞血管的进程,可引起冠心病,心肌梗塞,脑梗塞,眼底血管病变,导致视力下降,甚至失明,因此如何预防和缓解高甘油三酯血症具有极其重要的意义。
中链甘油三酯天然存在于棕榈仁油、椰子油等食品和母乳中,是膳食脂肪的来源之一,主要成分是辛酸甘油酯和癸酸甘油酯。
甘油三酯在人体内的水解通常仅在1,3位脂肪酸,2位则是以2-单甘酯的形式吸收,当1,3位上均为中链脂肪酸且2位上是长链脂肪酸时,甘油三酯的水解和吸收速度最快,中长链脂肪酸甘油三酯较普通的植物油既能提供人体必需的脂肪酸又能快速氧化供能,可最大限度地发挥各种脂肪酸的营养价值和生理功能。
中链甘油三酯仅由饱和脂肪酸构成,凝固点低,室温下为液体,粘度小。与大豆油比较,完全是无臭、无色的透明液体。与普通的油脂和氢化油脂相比,中链甘油三酯不饱和脂肪酸的含量极低,氧化稳定性非常好,其碘值不超过0.5。中链甘油三酯在高温和低温下特别稳定。
牡丹籽油不仅营养丰富,具有抗衰老、延年益寿、激活末梢神经等奇特功效,对心脑血管疾病、降血脂、降血压、防癌抗癌、抗辐射、保护视力、增强智力等具有预防和改善作用,还可消除色素积斑、减少皱纹,使肌肤细腻光洁,富有弹性,尤其是对胎婴儿的视力、大脑、机体发育影响极大。
牡丹籽油是油酸、亚油酸和α-亚麻酸含量最为均衡的食用油。经过专业机构对牡丹籽油的营养成分的测定,油用牡丹作物白凤牡丹和紫斑牡丹产的牡丹籽油中,油酸、亚油酸、α-亚麻酸的含量比例呈1:1:1.5。
菜籽油是一种芥酸含量特别高的油,人体对菜籽油的吸收率很高,可达99%。菜籽油具有一定的软化血管、延缓衰老的功效。
菜籽油主要取自甘兰型油菜和白菜型油莱的种子。含蛋白质21%-27%,磷脂1%。菜籽油是由白菜型油菜籽榨得,而种植的油菜大部分都是甘蓝型油菜。经过种植培育,很多品种的芥酸含量会低于3%。产地不同的油菜籽脂肪酸组成有很大区别,一些油菜籽含油酸量超过50%。
菜籽油中含花生酸0.4-1.0%,油酸14-19%,亚油酸12-24%,芥酸31-55%和亚麻酸1-10%。从营养价值方面看,人体对菜籽油消化吸收率可高达99%,并且有利胆功能。在肝脏处于病理状态下,菜籽酮也能被人体正常代谢。另外,菜籽油中含有少量芥酸和芥子甙等物质,一般认为这些物质对人体的生长发育不利。如能在食用时与富含有亚油酸的优良食用油配合食用,其营养价值将得到提高。
山茶油中不含芥酸和胆固醇。经测试:山茶油中不饱和脂肪酸高达90%以上,油酸达到80-83%,亚油酸达到7-13%。
山茶油不含芥酸、胆固醇、黄曲霉素等对人体有害物质。对茶油和橄榄油进行的对比研究表明,茶油与橄榄油的成分尽管有相似之处,但茶油的食疗双重功能实际上优于橄榄油,也优于其它任何油脂。橄榄油含不饱和脂肪酸达75-90%,茶油中的不饱和脂肪酸则高达85%-97%,为各种食用油之冠。茶油中含有橄榄油所没有的特定生理活性物质茶多酚和山茶甙,能有效改善心脑血管疾病、降低胆固醇和空腹血糖、抑止甘油三脂的升高,对抑制癌细胞也有明显的功效。山茶油按色泽、气味、酸度的等级不同,分为毛茶油、2级茶油和1级茶油。山茶油营养丰富,含脂肪酸、山茶甙、茶多酚、皂甙、鞣质,及富含抗氧化剂和具有消炎功效的角鲨烯,角鲨烯与黄酮类物质,对抗癌有着极佳的作用。山茶油还富含维生素E、钙、铁和锌等微量元素,其锌含量是大豆油的10倍。
山茶油中的不饱和脂肪酸超过橄榄油。山茶油中的不饱和脂肪酸高达85%-97%,为各种食用油之冠。山茶油中含有橄榄油所没有的特定生理活性物质茶多酚和山茶甙。山茶油中的茶多酚和山茶甙对降低胆固醇和抗癌有明显的功效,抗氧化,耐贮存。
牡丹籽油中含有高达43%以上的α-亚麻酸,对儿童的智力发育有非常显著的促进作用,对老年人的智力退化的改善效果也尤为明显。α-亚麻酸是一种不饱和脂肪酸,在人体中代谢能够被转化为DHA和EPA。DHA和EPA可以直接被人体吸收,滋养脑细胞,促进脑细胞的分裂增长;增进脑神经和视神经的发育,从而改善大脑的记忆力,增强逻辑思维能力,明亮双眼。
红花籽油又称红花油,是以红花籽为原料制取的油品。红花籽油的脂肪酸组成为棕榈酸5~9%,硬脂酸1~4.9%,油酸11~15%,亚油酸69~79%。油酸型红花籽油以油酸为主,约占60%,亚油酸25%。油中含维生素E、谷维素和甾醇等营养成分,有防治动脉硬化和降低血液胆固醇的作用。
红花籽油含饱和脂肪酸6%,油酸21%,亚油酸73%。由于其主要成分是亚油酸,是食物油中亚油酸最高的油,所以营养价值高,并能起到防止人体血清胆固醇在血管壁里沉积,防治动脉粥样硬化及心血管疾病的医疗保健效果。在医药上红花籽油可用于制造防治心血管疾病及高血压和肝硬化等疾病的药品。此外,红花籽油中还含有大量的维生素E、谷维素、甾醇等药用成分。
文冠果具有较高的营养价值,油脂成份在种子和种仁中含量极高。研究结果证明:种仁中含油量达66.39%,优良品种的种仁中含油量达72%,超过一般的油料植物,其油脂的基本组成如下:硬脂酸、油酸38.9%和亚油酸40.2%,和豆油、核桃油相近,也是营养价值最高的部分山嵛酸7.2%亚麻酸及甘碳烯酸各为0.3%文冠果是经济木本油料树种,种子含油率为30.4%-47%,种仁含油量高达66.39%,食用文冠果油可有效预防高血压、高血脂、血管硬化等病症。
脂肪酸碳链的长短是以含碳量来区分的,把含碳量4-6的脂肪链称为短链脂肪酸,含8-12个碳的脂肪链称为中链脂肪酸,将含14个碳以上的脂肪链称为长链脂肪酸。在日常生活中接触最为广泛的是长链脂肪酸,如动物脂肪中的猪油、牛油、羊油、鸡油、鱼油等,植物油中的花生油、大豆油、玉米油、葵花油、芝麻油、橄榄油等,这些脂肪中的主要成分均为长链脂肪酸,中链脂肪酸在动物脂肪中有少量存在,如猪、牛、羊的脂肪中,以牛油含中链脂肪酸较高,约占总脂肪的3%-4%,猪油中含量只有1%左右。中链脂肪酸在一些食物中也存在,比如乌鸡、椰子、牛奶、棕榈、母乳、牛肉、羊肉、鱼类等,其中椰子、棕榈、母乳、乌鸡、牛奶中含量较丰富。
长链脂肪酸中存在着饱和脂肪酸、单不饱和脂肪酸、多不饱和脂肪酸等多种脂肪酸,中链脂肪酸则不然,在它的家族中均为饱和脂肪酸。中链饱和脂肪酸不仅不会升高血液中的胆固醇水平,还具有降低胆固醇,对多种慢性疾病有定的调节作用。
中链脂肪酸是通过门静脉系统进入肝脏的,而不像长链脂肪酸要在肠道的上皮细胞里重新与甘油结合成甘油三酯,再参与形成乳糜微粒,后才能经淋巴系统进入血液循环。所以中链脂肪酸在人体内的吸收速度很快。一般脂肪在人体内需要3-4个小时才可完成消化过程,而中链脂肪酸只需几分钟就能直接从肠道上皮细胞吸收,再通过肝门静脉进入血液循环加以利用。这样,中链脂肪酸不容易在体内发生沉积,对减肥有一定的作用。
中链脂肪酸在转运时不需要与其他脂类物质形成乳糜微粒,也不易与蛋白质结合形成脂蛋白。因此,不会增加血液中的胆固醇的含量,对降低血脂有一定的调节作用。
由于中链脂肪不经过淋巴系统而直接经静脉进入肝脏,在肝脏内不合成脂类,故不易形成脂肪肝,对肝脏具有保护作用。正因为中链脂肪酸的这一特性,对患有胰脏、肝胆疾病的患者往往采用中链脂肪作为他们食用油,当人体摄入中链脂肪后,能够引起胰液的分泌。
因此开发一种用于预防和缓解高甘油三酯血症的特殊医学用途脂肪组配方食品,弥补目前市场针对高甘油三酯血症病人专用的特殊医学用途脂肪组件配方食品的空白,是当前一个重要的课题。
发明内容
本发明所要解决的技术问题是,提供一种中链脂肪和长链脂肪为脂肪来源,营养成分均衡,消化吸收快,快速提供能量,对高甘油三酯血症具有良好的缓解和预防作用的特殊医学用途脂肪组件配方食品及其制备方法。

优选的,所述中链甘油三酯中辛酸甘油酯和癸酸甘油酯的质量比为55-57:43-45。

效果评价1
通过对比分析评价实施例1、实施例2、实施例3所制得的特殊医学用途脂肪组件配方食品对小鼠餐后血脂(甘油三酯TG、总胆固醇TC)的改善情况。
取小鼠50只,随机分为5组,分别为空白组、大豆油组(长链脂肪酸)、实施例1组、实施例2组、实施例3组,由基础饲料适应性喂养1周后将各组小鼠禁食18h(不禁水)并灌胃,灌胃量为每克小鼠体重灌胃0.1mg样品,油脂样品用0.5%的CMC-Na溶液稀释,对3组小鼠依次灌胃生理盐水、大豆油、实施例1组、实施例2组、实施例3组,4h后眼球取血,血液4000r/min离心5min,测定血清TG、TC含量。
小鼠餐后血脂改善情况,见表1。

由表1可知,实施例1组、实施例2组、实施例3组的TG均显著低于大豆油组,并显著高于空白组。实施例1组、实施例2组、实施例3组的TC显著低于大豆油组,略高于空白组但无显著差异。因此实验结果说明,本发明的产品(中/长链脂肪酸)相比较于大豆油(长链脂肪酸)能够在短时间内抑制小鼠血清中TG和TC的增加。
效果评价2
通过对比分析评价实施例1、实施例2、实施例3所制得的特殊医学用途脂肪组件配方食品对小鼠成长实验中体重、TG、TC的改善情况。
取小鼠60只,随机分为6组,分别为空白组、猪油组、大豆油组(长链脂肪酸)、实施例1组、实施例2组、实施例3组,由基础饲料适应性喂养1周后将各组小鼠喂食相应饲料(见表2),饲养4周后(每周称量一次体重),所有小鼠禁食18h,摘眼球取血,血液4000r/min离心5min,分离血清,测定血清中的TG、TC含量。灌胃量为每克小鼠体重灌胃0.1mg样品,油脂样品用0.5%的CMC-Na溶液稀释,对3组小鼠依次灌胃生理盐水、大豆油、实施例1组、实施例2组、实施例3组,4h后眼球取血,血液4000r/min离心5min,测定血清TG和TC含量。

由表3可知,在实验开始后的第1周、第2周和第3周,不同组别间小鼠的体重无显著差异;在第4周时实施例1组、实施例2组和实施例3组体重均高于空白组而低于大豆油组、猪油组。因此说明本发明的3个实施例(中/长链脂肪酸)相较于大豆油组(长链脂肪酸)、猪油组,体重明显增长缓慢。
小鼠成长实验中本发明对小鼠血清中TG、TC的影响,见表4。

由表4可知,实施例1组、实施例2组、实施例3组的TG和TC均低于猪油组、大豆油组,并高于空白组。因此实验结果说明,本发明的产品(中/长链脂肪酸)相比较于大豆油(长链脂肪酸)、猪油能够在短时间内抑制小鼠血清中TG和TC的增加。
显然,上述实施例仅仅是为清楚地说明所作的举例,并非对实施方式的限定。对于所属领域的普通技术人员来说,在上述说明的基础上还可以做出其它不同形式变化或变动。这里无需也无法对所有的实施方式予以穷举。而由此所引申出的显而易见的变化或变动仍处于本发明创造的保护范围之中。
Claims (10)
3.根据权利要求1或2所述的医用脂肪组件配方食品,其特征在于,所述中链甘油三酯中辛酸甘油酯和癸酸甘油酯的质量比为55-57:43-45。
4.根据权利要求1或2所述的医用脂肪组件配方食品,其特征在于,所述医用脂肪组件配方食品中长链脂肪酸和中链脂肪酸的质量比为44-52:48-54。
5.一种如权利要求1-4中任一项所述医用脂肪组件配方食品的制备方法,其特征在于,采用混合搅拌法制备所述医用脂肪组件配方食品。
6.根据权利要求5所述的制备方法,其特征在于,包括如下步骤:
(1)将所述中链甘油三酯、牡丹籽油、菜籽油、山茶油、红花籽油和文冠果油混合,得到混合组分;
(2)将所述混合组分进行包装,得到所述医用脂肪组件配方食品。
7.根据权利要求6所述的制备方法,其特征在于,所述步骤(1)中,混合的时间为30-40min。
8.根据权利要求6所述的制备方法,其特征在于,所述步骤(1)中,混合的搅拌速度为50-60r/min。
9.根据权利要求6所述的制备方法,其特征在于,所述步骤(1)中,混合的温度为20-30℃。
10.根据权利要求6所述的制备方法,其特征在于,所述步骤(2)中,包装的方法为灌装后进行封盖。
