本发明公开了一种适用于婴幼儿的山茶调和油,所述的调和油包含茶油、核桃油、亚麻籽油,所述一份调和油中含有的茶油重量为12.9至12.96个单位重量,所述一份调和油中含有的核桃油重量为6.28至6.33个单位重量,所述一份调和油中含有的亚麻籽油的重量为0.73至0.78个单位重量,所述调和油每20克中添加DHA 30mg,维生素A 90ugRAE,维生素E 1.8mgα?TE。本发明营养丰富,健康安全,可适应、调整婴幼儿人群摄入合适比例脂肪酸及DHA和维生素。
Description
技术领域
本发明涉及食品和营养保健技术领域,尤其是涉及一种适用于婴幼儿的山茶调和油。
背景技术
根据《中国居民膳食营养素参考摄入量(2013版)》推荐,总脂肪摄入量:0~6月婴儿脂肪的适宜摄入量(AI)是48%E;7~12月龄40%E;1~3岁幼儿35%E;饱和脂肪酸摄入量:推荐0~1岁婴儿以母乳为参考;1~3岁无参考值,但FAO(联合国粮食及农业组织)在2010年推荐2~18岁人群摄入量上限为8%E;4-17岁人群<8%E;单不饱和脂肪酸摄入量:目前未设定我国2-17岁人群MUFA的AMDR,仅提出原则,即在控制总脂肪供能<30%,SFA在<10%E或<8%E,满足ω-6和ω-3PUFA适宜摄入量的前提下,其余膳食脂肪供能由MUFA提供;ω-6多不饱和脂肪酸:0~6月龄婴儿花生四烯酸(ARA)的AI为150mg/,亚油酸(LA)的AI为4.2g/d(7.3%E);7~12月龄亚油酸AI为4.6g/d(6.0%E);1~3岁幼儿亚油酸AI为4%E;ω-3多不饱和脂肪酸:0~6月婴儿α-亚麻酸(ALA)的AI为500mg/d(0.87%E);7~12月龄ALA的AI为510mg/d(0.66%E);1~3岁幼儿ALA的AI为0.6%E;鉴于α-亚麻酸在人体内转化为DHA的效率有限,加上我国居民居住地多数远离海岸,膳食EPA和DHA来源较少,因此,对那些处于脑发育关键期并对DHA有特别需要的婴幼儿,应考虑设定DHA的AI。
可见,1~3岁幼儿的脂肪酸摄入量、脂肪酸组成与成人相差不大,但DHA摄入量有更高的要求。市面上的食用油,大部分是单一品种的植物油,而本应作为均衡营养的调和油却鱼龙混杂,消费者无法选择。因此需要在众多的食用油中选择合适的作为特殊人群食用油的原料,使产品做到真正的营养均衡。
发明内容
本发明是为了解决婴幼儿人群与成年人每日所需脂肪酸摄入量、脂肪酸组成有差别,同时婴幼儿还需要一些比成年人需要量更多的营养问题,提供一种营养丰富,健康安全,可适应、调整婴幼儿人群摄入合适比例脂肪酸及DHA和维生素的适用于婴幼儿的山茶调和油。
为了实现上述目的,本发明采用以下技术方案:一种适用于婴幼儿的山茶调和油,所述的调和油包含茶油、核桃油、亚麻籽油,所述一份调和油中含有的茶油重量为12.9至12.96个单位重量,所述一份调和油中含有的核桃油重量为6.28至6.33个单位重量,所述一份调和油中含有的亚麻籽油的重量为0.73至0.78个单位重量,所述调和油每20克中添加DHA 30mg,维生素A 90ugRAE,维生素E 1.8mgα-TE。维生素A是人体必需的脂溶性维生素,它是视觉细胞内感光物质的重要成分,促进眼睛各组织结构正常分化,维持正常视觉和暗视力;维生素A及代谢产物是上皮组织生长、分化、再生及其维持自身完整性所必需;维生素A有免疫调节功能,缺乏维生素A将导致反复呼吸道感染;作为抗氧化剂可直接抑制肿瘤生成;有助于铁代谢避免发生缺铁性贫血;2010年全国居民膳食营养摄入调查发现,中国居民普遍缺乏维生素A,中位摄入量只达到推荐量的67%,尤其是孕妇及婴幼儿更需要补充维生素A;根据GB 14880营养强化剂使用标准相关规定,植物油中需添加天然维生素E。维生素E耐热性好,加热至200℃损失仍然较小,可以防止油脂的自动氧化、光氧化和过氧化;在降血压、抗癌、抗衰老、治疗老年痴呆症、高血压、冠心病、心肌梗塞、动脉硬化、血栓等方面具有重要作用;天然维生素E的生理活性是合成维生素E的1.3~1.4倍,而且安全性较高,最大摄入量可达1~3.2g/d,更易吸收;婴幼儿人群所需要的不仅仅是油酸、亚油酸和α-亚麻酸,也需要添加长链多不饱和脂肪酸,主要为DHA。
作为优选,所述的茶油采用一级山茶籽压榨制作,所述茶油中不饱和脂肪酸含量高于89%。茶油是从山茶科油茶树种子中获得,是我国特有的传统食用植物油,采用高质量的、不饱和脂肪酸含量高于89%的茶油,其中油酸约78.8%,亚油酸约10.0%,其单不饱和脂肪酸含量是目前食用油中最高的,茶油的饱和脂肪酸含量一般在10%左右,主要由7%~9%棕榈酸和1%~3%硬脂酸组成;此外,婴幼儿、儿童食用山茶油可利气、通便、消火、助消化,促进身体发育,茶油还含有丰富的维生素E、多种人体必需的无机元素钙、镁、钾、锌等,含有角鲨烯、茶多酚、茶皂素、山茶苷、山茶皂苷等多种生物活性物质,因此,茶油具有显著的抗氧化、降低胆固醇、促进血液循环、防止早衰、预防癌症发生、提高机体免疫力等多种保健功能;茶油口味清香,无论是添加到婴幼儿的辅食,还是孕妇烹饪中使用,均能促进食欲,山茶油的烟点能达到220℃,而且不易因油温的升高和重复食用而产生对人体有害的物质;茶油中油酸含量较高,但是亚油酸含量与α-亚麻酸含量较少,作为单一油脂无法满足婴幼儿人群的营养需求,因此可选择2种分别富含必需脂肪酸的植物油作为补充油剂。
作为优选,所述的核桃油采用一级核桃仁压榨制作,所述核桃油中含饱和脂肪酸7.2%,单不饱和脂肪酸18.6%,ω-6多不饱和脂肪酸68.8%,ω-3多不饱和脂肪酸8.13%。单不饱和脂肪酸即油酸,ω-6多不饱和脂肪酸即亚油酸,ω-3多不饱和脂肪酸即α-亚麻酸,核桃油含丰富的亚油酸,亚油酸对人体的主要作用是防治心血管疾病,包括酯化胆固醇、抑制血小板聚集、增加血管弹性、降低血液黏度,预防和防治糖尿病的各种慢性并发症,如调节胰岛素活性、改善蛋白尿、肾小球动脉硬化和肾小管功能紊乱;亚油酸还能促进胎儿和婴幼儿大脑及神经系统发育。
作为优选,所述的亚麻籽油采用一级亚麻籽压榨制作,所述亚麻籽油中含饱和脂肪酸13%,油酸22%,亚油酸14%,α-亚麻酸49%。亚麻,又称胡麻,属亚麻科一年生草本植物,是一种古老的农作物,亚麻籽油俗称“月子油”和“聪明油”,有“液体黄金”的美誉,对孕妇和婴幼儿特别有益;亚麻籽油是已知的ω-3多不饱和脂肪酸含量最高的植物油脂,含饱和脂肪酸13%,油酸22%,亚油酸14%,α-亚麻酸49%;亚麻籽油含丰富的维生素E,但整个精炼过程会损失50%;亚麻籽油还含有环亚油肽A、香草酸、羟基苯甲酸、肉桂酸等生物活性物质;目前已知亚麻籽油有抗炎、降脂、降血压、抑制应激反应、抑制肿瘤产生和转移、增强胰岛素功能和改善糖尿病、提高认知功能和改善眼睛疾病、防治骨质疏松和慢性肾病等多种保健功能。
作为优选,所述的DHA采用海洋微藻提取。EPA和DHA主要在冷水域的水生物种,特别是单细胞藻类中合成,三文鱼、鲱鱼、凤尾鱼等以单细胞藻类为食的深海鱼,在其脂肪中含有较多的EPA和DHA;α-亚麻酸是我国居民膳食中最主要的ω-3多不饱和脂肪酸,在体内可以转化成EPA(二十碳五烯酸)和DHA(二十二碳六烯酸)、DPA(二十二碳五烯);但α-亚麻酸的食物来源有限,只在亚麻籽油、紫苏油和核桃油中含量较高,膳食摄入量较低,且转化成EPA和DHA的效率也很有限;
DHA是人体必需的多不饱和脂肪酸,对人体有重要的生理调节供能,是大脑、神经、视觉细胞中重要的脂肪酸成份,能促进婴幼儿的脑部和视力的机能发育,提高婴幼儿视觉的敏锐度,有利于智力、学习和记忆能力的提高;DHA还能抗炎抗过敏,减少婴幼儿哮喘发病率;
在鱼油中,DHA含量为总脂肪酸的7.16%,而EPA的含量则高达8.31%;EPA是AA(花生四烯酸)的竞争性抑制剂,可以置换细胞膜中的AA,从而降低婴幼儿对AA的吸收量,阻碍婴幼儿的生长发育;相关的研究也表明EPA不利于儿童的生长发育,不同年龄段对DHA和EPA的需要量是不同的,婴儿则不需要EPA;为避免EPA对婴幼儿生长发育所造成的抑制作用,FAO/WHO专家委员会的报告指出,添加于奶粉中的鱼油,其DHA与EPA的比例最低应该为10∶1;因此,EPA含量高的鱼油不应该作为孕期及哺乳期妇女和婴幼儿的营养添加剂,孕期及哺乳期妇女应补充非鱼油来源或低EPA含量的DHA;
天然鱼油中DHA含量在12%左右,通过提纯酯化,从甘油三酯型转变为乙酯型DHA,含量达到60~65%;天然微藻中的DHA含量在35%以上,不需要浓缩酯化,保持甘油三酯形式,更稳定更安全,且有利于吸收代谢;海藻油不含鱼腥味,不会对食品的风味产生不良的影响;海藻油没有鱼油中汞及其它重金属、有机物的污染;海洋微藻DHA含量高,EPA含量低,DHA和EPA的含量比远大于10∶1;来源于海洋微藻的DHA更适合在孕妇、哺乳期妇女和儿童食品中添加。
假设1~3岁幼儿,日摄入膳食能量1000kcal(其余能量由母乳或婴儿配方奶粉提供),摄入食用油20g,推荐摄入ω-6多不饱和脂肪酸:1000×4%÷9=4.44g,ω-3多不饱和脂肪酸:4.44÷5=0.89g。假设亚麻籽油和核桃油提供所有的ω-3和ω-6脂肪酸,计算得核桃油6.3g,亚麻籽油0.76g,茶油12.94g。在20g调和油中加入DHA 30mg,维生素A 90ugRAE,维生素E 1.8mgα-TE。
因此,本发明具有如下有益效果:(1)营养丰富,健康安全;(2)可适应、调整婴幼儿人群摄入合适比例脂肪酸及DHA和维生素。
具体实施方式
下面对本发明做进一步的描述。
一种适用于婴幼儿的山茶调和油,调和油包含茶油、核桃油、亚麻籽油,一份调和油中含有的茶油重量为12.94个单位重量,一份调和油中含有的核桃油重量为6.3个单位重量,一份调和油中含有的亚麻籽油的重量为0.76个单位重量,调和油每20克中添加DHA 30mg,维生素A 90ugRAE,维生素E 1.8mgα-TE,茶油采用一级山茶籽压榨制作,茶油中不饱和脂肪酸含量高于89%,核桃油采用一级核桃仁压榨制作,核桃油中含饱和脂肪酸7.2%,单不饱和脂肪酸18.6%,ω-6多不饱和脂肪酸68.8%,ω-3多不饱和脂肪酸8.13%,亚麻籽油采用一级亚麻籽压榨制作,亚麻籽油中含饱和脂肪酸13%,油酸22%,亚油酸14%,α-亚麻酸49%,DHA采用海洋微藻提取。
具体实施过程是,首先检测茶油、核桃油、亚麻籽油的生产原料一级山茶籽、一级核桃仁、一级亚麻籽合格后,将一级山茶籽、一级核桃仁、一级亚麻籽按比例混合后压榨获得调和油,或者将一级山茶籽、一级核桃仁、一级亚麻籽分别压榨获得茶油、核桃油、亚麻籽油,再将茶油、核桃油、亚麻籽油按比例混合调制成调和油;
获得调和油后,在每20克调和油中再加入DHA 30mg,维生素A 90ugRAE,维生素E 1.8mgα-TE,充分溶解、融合后即得成品。

1.一种适用于婴幼儿的山茶调和油,其特征在于,所述的调和油包含茶油、核桃油、亚麻籽油,所述一份调和油中含有的茶油重量为12.9至12.96个单位重量,所述一份调和油中含有的核桃油重量为6.28至6.33个单位重量,所述一份调和油中含有的亚麻籽油的重量为0.73至0.78个单位重量,所述调和油每20克中添加DHA30mg,维生素A 90ugRAE,维生素E 1.8mgα-TE。
2.根据权利要求1所述的一种适用于婴幼儿的山茶调和油,其特征是,所述的茶油采用一级山茶籽压榨制作,所述茶油中不饱和脂肪酸含量高于89%。
3.根据权利要求1所述的一种适用于婴幼儿的山茶调和油,其特征是,所述的核桃油采用一级核桃仁压榨制作,所述核桃油中含饱和脂肪酸7.2%,单不饱和脂肪酸18.6%,ω-6多不饱和脂肪酸68.8%,ω-3多不饱和脂肪酸8.13%。
4.根据权利要求1所述的一种适用于婴幼儿的山茶调和油,其特征是,所述的亚麻籽油采用一级亚麻籽压榨制作,所述亚麻籽油中含饱和脂肪酸13%,油酸22%,亚油酸14%,α-亚麻酸49%。
5.根据权利要求1所述的一种适用于婴幼儿的山茶调和油,其特征是,所述的DHA采用海洋微藻提取。
