技术领域
本发明属于食用油加工技术领域,具体涉及一种儿童专用亚麻籽油调和油。
背景技术
亚麻籽油(flax oil)的主要成分为α-亚麻酸,其含量高达50-60%,是深海鱼油含量的2.5倍。近年来随着科学技术的进步,亚麻籽油的营养价值和保健功能引起了医疗、食品、农业等领域科学家的关注。大量的研究结果表明,亚麻籽油是一种油脂食用油,富含亚麻酸及各种不饱和脂肪酸,在人体内可直接转化成DHA和EPA,是一种经济实用的“深海鱼油”。众所周知,“鱼油”中的EPA和DHA,是由海里的α-亚麻酸在鱼体内转化合成,人服用α-亚麻酸后也会在人体内合成EPA和DHA,所以实用富含α-亚麻酸的亚麻籽油就可以起到吃鱼油的效果,修复更新脑神经细胞膜的不饱和脂肪酸链,起到健脑、促智、降血脂、抗血小板聚集、扩张小动脉和预防血栓形成等功效。
儿童生长发育过程中对DHA、EPA、钙、维生素D、维生素A等的需求均较高,传统的食用油多在脂肪酸比例上达到均衡营养,如金龙鱼1:1:1调和油,但目前市面上很少有食用油专门针对儿童营养素需要而设计。儿童生长过程中大脑发育较快,而EPA、DHA等对大脑发育至关重要,而传统的食用油脂中α-亚麻酸含量较低,无法在体内转化成EPA、DHA等,需要额外进行补充,因此在儿童生长发育过程中需提供额外的鱼肝油作为营养补充剂。但普通鱼肝油的质量参差不齐,产品价格较高,很难满足普通消费者的需求。
发明内容
为解决上述现有技术中的补助,本发明旨在提供一种儿童专用亚麻籽油调和油,该调和油针对儿童生长发育特点进行制作,提供儿童日常所需的亚麻酸、矿物质及多种脂溶性维生素,具有提高儿童智力和身体发育的特点。同时产品制作方法科学环保无污染,保证产品安全、吸收效率高。为实现上述目的,本发明通过以下技术方案实现:
一种儿童专用亚麻籽油调和油,其特征在于,包括以下重量份的物质组成:亚麻籽100-300份,核桃30-60份,油茶籽60-80份,虾皮30-55份,胡萝卜50-75份,鳝鱼20-55份;
所述儿童专用亚麻籽油通过以下方法制备而成:(一)、干燥:将亚麻籽、核桃、油茶籽晒干,含水量降至10%以下,粉碎至20目,备用;(二)、原料预处理:(a)胡萝卜处理:胡萝卜清洗干净,切片,沸水中烫漂3-5min,沥干表面水分,微波干燥至含水量小于10%,粉碎至40-60目,得胡萝卜干粉,备用;(b)、鳝鱼处理:将鳝鱼去内脏,清洗干净血水,沸水中烫漂3-5min,捞出沥干,微波干燥至含水量小于10%,粉碎至40-60目,得鳝鱼干粉备用;(c)虾皮处理:将虾皮清洗干净,清水浸泡一天脱盐,之后沸水中煮沸10-20min,沥干表面水分,微波干燥至含水量小于10%,粉碎过40-60目筛,备用;(三)提取:将步骤(一)与步骤(二)处理后的原料置于超临界二氧化碳萃取装置中,调整萃取温度为45-80℃,萃取压力为25-40MPa,分离釜1的压力为8-10MPa,分离釜1的温度为45-75℃,分离釜2的压力为7-10MPa,分离釜2的萃取温度为45-55℃,萃取时间为5-6h,萃取后得亚麻籽油调和油初产品;(四)浸提:将步骤(三)超临界萃取后的残渣过筛,取40-60目筛下物备用;之后将萃取后的亚麻籽油调和油初产品在真空条件下加热至150-210℃,加入上述40-60目筛下物,维持真空度为0.075-0.095MPa,真空浸提15-35min,破真空,离心取油脂层,压滤,得亚麻籽油调和油。
作为具体技术方案,所述步骤(二)中微波干燥条件为微波剂量0.15-0.35kw/kg,微波处理时间为10-15min,控制微波处理温度为65-85℃之间。
作为优选技术方案,所述亚麻籽150-250份,核桃45-50份,油茶籽65-75份,虾皮45-50份,胡萝卜55-65份、鳝鱼35-45份。
作为优选技术方案,所述亚麻籽220份,核桃50份,油茶籽70份,虾皮45份,胡萝卜60份、鳝鱼40份。
本发明采用亚麻籽、核桃、山茶籽为原料,同时提取三种物质中的油脂,从提取过程中将油脂进行混合,丰富产品中脂肪酸组成比例,采用超临界二氧化碳萃取技术,环保、安全、提取效率高无残留,适合儿童食用。产品中复配胡萝卜、虾皮、鳝鱼,提高产品中的脂溶性维生素、钙等营养元素。鳝鱼是营养丰富,富含蛋白质、钙、磷、铁、烟酸等多种营养成分,其钙、铁含量在常见的淡水鱼类中居第一位,另外还含有丰富的DHA和卵磷脂。鳝鱼中含有丰富的维生素A,每100g鳝鱼中含有维生素A的量高达270ug,可促进儿童生长发育,保护视力,可增加抗病力和抗癌作用,缺乏可导致儿童生长迟滞、发育不良、患夜盲症。因此,添加鳝鱼可有效增加调和油中的维生素A的含量。虾皮中含有丰富的矿物质,其中以钙的含量为最高,可高达900mg,因此,以虾皮为原料可有效增加产品中的钙含量。胡萝卜是一种质脆味美、营养丰富的家常蔬菜,素有“小人参”之称。胡萝卜富含糖类、脂肪、挥发油、胡萝卜素、维生素A、维生素B1、维生素B2、花青素、钙、铁等营养成分。每100g胡萝卜中含铁0.6毫克,维生素A原(胡萝卜素)1.35-17.25毫克,维生素B1 0.02-0.04毫克,维生素B 20.04-0.05毫克,维生素C12毫克,热量150.7千焦,另含果胶、淀粉、无机盐和多种氨基酸。各类品种中,尤以深橘红色胡萝卜素含量最高。
综上可知本发明具有以下有益效果:
一、健脑益脑、营养均衡
本发明采用亚麻籽为主要原料,同时原料中复配核桃、茶籽,使得终产品中含有核桃油、茶籽油,改善亚麻籽油的脂肪酸组成比例,使得w-3与w-6脂肪酸组成比例更加协调,保证不饱和脂肪酸中的单不饱和脂肪酸与多不饱和脂肪酸比例更接近,更符合我国居民膳食营养素组成比例。亚麻籽油中的α-亚麻酸在人体内转化成DHA和EPA,而DHA和EPA是儿童大脑发育所必须的物质,可修复更新脑神经细胞膜的不饱和脂肪酸链,起到健脑、促智等作用。茶油中的高不饱和脂肪酸组成对儿童智力发育也有一定的促进作用,核桃本身作为益智健脑食品被广大消费者接受,因此图配核桃也能起到健脑益智的作用。同时添加虾皮、鳝鱼、胡萝卜,补充虾皮中较高的钙质,鳝鱼中较高的活性物质及维生素A,胡萝卜中较高的维生素A、维生素D等物质,使得终产品中维生素、钙等得到充分的富集,使得营养更加均衡。
二、工艺考究、安全无残留
本发明改变原来调和油的依纯油脂进行调和的加工方法,产品从原料开始调和,根据原料不同的特性进行细化分级,保证萃取效率。采用较绿色安全的超临界二氧化碳萃取技术,避免传统萃取过程中的残留问题,提取效率高,安全无残留。超临界二氧化碳萃取后将残渣过滤,分级后重新加入到超临界萃取后的油脂中进行浸提,使得产品中的油溶性营养物质,如维生素A、维生素D等,充分的溶解于油脂中,使得产品的脂溶性营养元素得到充分的富集。
为检验本发明的技术效果,提供本发明亚麻籽油调和油营养元素成分检测数据,结果如下表1所示。

由表1可以看出,从上述表格内的数据可以看出,本发明的儿童专用茶油,不仅含有丰富的不饱和脂肪酸和亚麻酸,而且还含有较多的微量元素和活性成分。

一种儿童专用亚麻籽油调和油,包括以下重量份的物质组成:亚麻籽100-300份,核桃30-60份,油茶籽60-80份,虾皮30-55份,胡萝卜50-75份,鳝鱼20-55份;所述儿童专用亚麻籽油通过以下方法制备而成:
(一)、干燥:将亚麻籽、核桃、油茶籽晒干,含水量降至10%以下,粉碎至20目,备用;
(二)、原料预处理:(a)胡萝卜处理:胡萝卜清洗干净,切片,沸水中烫漂3-5min,沥干表面水分,微波干燥至含水量小于10%,粉碎至40-60目,得胡萝卜干粉,备用;(b)、鳝鱼处理:将鳝鱼去内脏,清洗干净血水,沸水中烫漂3-5min,捞出沥干,微波干燥至含水量小于10%,粉碎至40-60目,得鳝鱼干粉备用;(c)虾皮处理:将虾皮清洗干净,清水浸泡一天脱盐,之后沸水中煮沸10-20min,沥干表面水分,微波干燥至含水量小于10%,粉碎过40-60目筛,备用;
(三)提取:将步骤(一)与步骤(二)处理后的原料置于超临界二氧化碳萃取装置中,调整萃取温度为45-80℃,萃取压力为25-40MPa,分离釜1的压力为8-10MPa,分离釜1的温度为45-75℃,分离釜2的压力为7-10MPa,分离釜2的萃取温度为45-55℃,萃取时间为5-6h,萃取后得亚麻籽油调和油初产品;
(四)浸提:将步骤(三)超临界萃取后的残渣过筛,取40-60目筛下物备用;之后将萃取后的亚麻籽油调和油初产品在真空条件下加热至150-210℃,加入上述40-60目筛下物,维持真空度为0.075-0.095MPa,真空浸提15-35min,破真空,离心取油脂层,压滤,得亚麻籽油调和油。
实施例2
一种儿童专用亚麻籽油调和油,包括以下重量份的物质组成:亚麻籽300份,核桃30份,油茶籽60份,虾皮30份,胡萝卜50份,鳝鱼20-55份;所述儿童专用亚麻籽油通过以下方法制备而成:

(四)浸提:将步骤(三)超临界萃取后的残渣过筛,取40-60目筛下物备用;之后将萃取后的亚麻籽油调和油初产品在真空条件下加热至150-210℃,加入上述40-60目筛下物,维持真空度为0.075-0.095MPa,真空浸提15-35min,破真空,离心取油脂层,压滤,得亚麻籽油调和油。
实施例3
一种儿童专用亚麻籽油调和油,包括以下重量份的物质组成:亚麻籽100份,核桃60份,油茶籽80份,虾皮55份,胡萝卜75份,鳝鱼55份;所述儿童专用亚麻籽油通过以下方法制备而成:
(一)、干燥:将亚麻籽、核桃、油茶籽晒干,含水量降至10%以下,粉碎至20目,备用;
(二)、原料预处理:(a)胡萝卜处理:胡萝卜清洗干净,切片,沸水中烫漂3-5min,沥干表面水分,微波干燥至含水量小于10%,粉碎至40-60目,得胡萝卜干粉,备用;(b)、鳝鱼处理:将鳝鱼去内脏,清洗干净血水,沸水中烫漂3-5min,捞出沥干,微波干燥至含水量小于10%,粉碎至40-60目,得鳝鱼干粉备用;(c)虾皮处理:将虾皮清洗干净,清水浸泡一天脱盐,之后沸水中煮沸10-20min,沥干表面水分,微波干燥至含水量小于10%,粉碎过40-60目筛,备用;

(四)浸提:将步骤(三)超临界萃取后的残渣过筛,取40-60目筛下物备用;之后将萃取后的亚麻籽油调和油初产品在真空条件下加热至150-210℃,加入上述40-60目筛下物,维持真空度为0.075-0.095MPa,真空浸提15-35min,破真空,离心取油脂层,压滤,得亚麻籽油调和油。

(一)、干燥:将亚麻籽、核桃、油茶籽晒干,含水量降至10%以下,粉碎至20目,备用;
