随着社会的发展进步和人们生活水平的提高,人们对健康的渴望和对生活质量的要求越来越高,人们更希望能够开发出具有夏日解暑,生津止渴功能,不仅方便实用,同时还对身体具有一定保健功能作用的饮料食品。但就当前市面供应的饮料食品,只是提供人们消渴、解暑的需求,对功能性饮料而言,还处于初级加工阶段,其产品功效不突出、不明显、无特色。另外,目前很多饮料添加太多蔗糖,对高血脂、高血糖、肥胖等人群不适宜,追求一种具有复合型保健功能的饮料,且口感好、低热量,同时又食用方便的产品成为大势所趋。
【发明内容】
鉴于以上提出的问题,本发明提供了一种功能性速溶型蕨菜魔芋罗汉果复合颗粒饮品,该复合颗粒饮品符合绝大多数消费者医食同源,药膳同功的心理,味道清新,甜度适中,稍带粘稠,口感细腻,风味好,热量低,且具有清热清肺、利咽化痰、润肠通便、开胃化食、抗菌抗癌、以及降血压、将血糖、将血脂的功效,还可滋阴润肺、补脾和胃,特别适合高血脂、痰湿体质、肥胖人群食用。
为了实现上述的目的,本发明的技术方案如下:
一种蕨菜魔芋罗汉果复合颗粒饮料,该饮料由下列重量百分比的原料制备而成:蕨菜浆65-75%、魔芋精粉7-10%、罗汉果提取液10-16%、辅料添加物5-12%;
其中,所述辅料添加物由如下重量份的辅料制成:银耳10-20份、茯苓6-12份;具体制备方法为:将所述重量份的辅料分别粉碎成粉末,过60-80目筛,而后混匀,再按质量比为1:1的比例加水熬成糊状,即为所述辅料添加物;所述蕨菜浆通过如下方法制得:选用茎杆粗壮、肥大多汁、肉厚、无腐烂、无虫害、无病毒的新鲜蕨菜;经洗净、除杂后,切段;放入80-85℃质量分数为0.3%-0.7%的柠檬酸溶液中,热烫2-3min后取出,沥干;而后用打浆机打成浆,加入等量水后用胶体磨磨细,再用高压均质机在50℃、30MPa条件下进行均质处理,即得蕨菜浆;
所述魔芋精粉通过如下方法制得:在魔芋粉中加入魔芋粉总重量3-5倍水,持续搅拌充分混匀后,超声处理5-8min,而后静置40-60min使其充分溶胀,再将溶胀后的魔芋粉铺展开,厚度为0.1-0.2cm,然后置于70-90℃条件下干燥至含水率小于5%,再采用超微粉碎机进行粉碎,过300-500目筛,即得魔芋精粉;
所述罗汉果提取液通过如下方法制得:取罗汉果,碾碎后加入罗汉果质量8-10倍的水浸泡10-20min,而后在70-80℃条件下恒温提取20-30min,纱布过滤,取滤液;再在温度为45-55℃,真空度为0.02-0.03MPa的条件下,将滤液浓缩至质量浓度为40%-45%,即得所述罗汉果提取液。
上述蕨菜魔芋罗汉果复合颗粒饮料的制备方法为:按照所述重量百分比取所述原料,将蕨菜浆、罗汉果提取液、辅料添加物充分混匀,而后边搅拌边缓慢加入魔芋精粉,制得混合液;采用高压均质机对混合后的物料进行均质,优选均质温度为30-40℃,压力为20-25MPa;而后将均质后的物料放入旋转蒸发器中真空浓缩,浓缩至水分为20-25%,制得软料;进而将软料放入制粒机中过8-10目筛制成颗粒,而后将所得颗粒放入沸腾床干燥机中干燥至含水率小于5%;除去干燥后颗粒中的粉末后,包装制得成品复合颗粒饮料。
本发明所采用原料成份之详细情况如下:
蕨菜又叫拳头菜、猫爪、龙头菜,喜生于浅山区向阳地块,中国大部分地区均有,多分布于稀疏针阔混交林;食用部分是未展开的幼嫩叶芽,可当蔬菜煮食、炒制,或加工成干菜,做馅、腌渍成罐头等,也可制饴糖、饼干、代藕粉和药品添加剂。蕨菜嫩叶含胡萝卜素、维生素、蛋白质、脂肪、糖、粗纤维、钾、钙、镁、蕨素,蕨甙、乙酰蕨素、胆碱、甾醇,还含有18种氨基酸。味甘性寒,入药有解毒、清热、润肠、化痰等功效,经常食用可降低血压、缓解头晕失眠;此外,还可以止泻利尿,其所含的膳食纤维能促进胃肠蠕动,具有下气通便、清肠排毒的作用;还可治疗风湿性关节炎、痢疾、咳血等病,并对麻疹、流感有预防作用。
魔芋为天南星科魔芋属植物的泛称,又名磨芋、鬼芋、鬼头、花莲杆、蛇六谷等,其营养十分丰富,含淀粉35%,蛋白质3%,以及多种维生素和钾、磷、硒等矿物质元素,还含有人类所需要的魔芋多糖,即葡萄甘露聚糖达45%以上,具有低热、低脂、低糖和高纤维素的特点。魔芋中含量最大的葡萄甘露聚糖具有强大的膨胀力,有超过任何一种植物胶的粘韧度,即可填充胃肠,消除饥饿感,而其所含热量微乎其微,故魔芋是减肥健美的佳品;魔芋具有降脂的作用,其中含有一些化学物质,能降低血清胆固醇和甘油三酯,可有效地减轻高血压和心血管疾病;魔芋精粉加水加热后可产生魔芋凝胶,这种凝胶被人吃入体内后,能形成半透明膜衣,附着在肠壁上,阻碍各种有害物质,特别是致癌物质的吸收,因而起到防癌抗癌的作用;魔芋能开胃化食,又能清除肠道垃圾,其能使小肠酶分泌增加,加快清除肠壁上沉积物,使其尽快排出体外;魔芋含有对人体有利的果胶、生物碱、17种氨基酸和微量元素,对于现代富贵病也具有明显的疗效;魔芋还含有一种天然的抗菌素,魔芋与其他原料配制成食品,其能在食品表面形成抗菌膜,可防治细菌侵袭,延长贮存时间,起到保鲜防菌的作用。
罗汉果是葫芦科多年生藤本植物。中医以其果实入药,含有罗汉果甜苷、多种氨基酸和维生素等药用成分,甜度高、热量低,且具有清肺利咽,化痰止咳,润肠通便的功效,常饮罗汉果茶,可防多种疾病,现代医学证明,罗汉果对支气管炎、高血压等疾病有显著疗效,还是起到防治冠心病、血管硬化、肥胖症的作用。
银耳又称作白木耳、雪耳、银耳子等,属于真菌类银耳科银耳属。银耳味甘、淡、性平、无毒,具有强精补肾、滋阴润肺、益气清肠、补脾养胃、和血生津、清热润燥、安眠补脑等功效;可增强人体免疫力,提高肝脏解毒能力,保护肝脏功能;它不但能增强机体抗肿瘤的免疫能力,还能增强肿瘤患者对放疗、化疗的耐受力。银耳也是一味滋补良药,特点是滋润而不腻滞,对阴虚火旺不受参茸等温热滋补的病人是一种良好的补品。另外,银耳富有天然特性胶质,加上它的滋阴作用,长期服用可以润肤,并有祛除脸部黄褐斑、雀斑的功效。再者,银耳是一种含膳食纤维的减肥食品,它的膳食纤维可助胃肠蠕动,减少脂肪吸收。
茯苓又称玉灵、茯灵、万灵桂、茯菟,为寄生在松树根上的菌类植物,其主要成分为茯苓聚糖,含量很高。对多种细菌有抑制作用;能降胃酸,对消化道溃疡有预防效果;对肝损伤有明显的保护作用;有抗肿瘤的作用;能多方面对免疫功能进行调节;能使化疗所致白细胞减少加速回升;并有镇静的作用。还具有渗湿利水、健脾和胃、宁心安神、降血糖的功效。可用于小便不利、水肿胀满、痰饮咳逆、呕逆、恶阻、泄泻、遗精、淋浊、惊悸、健忘等症。
本发明提供了一种蕨菜魔芋罗汉果复合颗粒饮料,与现有技术相比,具有以下有益效果:
1、本发明的产品将蕨菜浆、魔芋精粉、罗汉果提取物与辅料组配成一种功能性速溶型复合颗粒饮料,该饮料集聚蕨菜、魔芋和罗汉果的保健功能于一身,具有清热清肺、利咽化痰、润肠通便、开胃化食、抗菌抗癌、以及降低血压、血糖、血脂的功效;并以银耳和茯苓粉碎后水煮制得的糊状物作辅料,使其同时具备滋阴润肺、补脾和胃、益气清肠等功效,进而可从整体上调节人体机能,增强机体免疫力,其符合绝大多数消费者医食同源,药膳同功的心理,满足了人们对于饮品同时具备解渴和保健双重功能的需求;
2、蕨菜本身具有涩味,本发明采用柠檬酸溶液热烫过的蕨菜制得的蕨菜浆,其中的涩味被去除,味道清新,进而改善最终产品饮料的品质;由于罗汉果本身具有高甜度,添加罗汉果提取物可取代白砂糖,使得产品甜度适中,热量低;魔芋具有低热、低脂、低糖,吸水性强,溶水后具有胶黏性的特性,而本发明采用现有魔芋粉再经加水溶胀、干燥和粉碎处理所得魔芋精粉,上述处理可改变魔芋粉的内部结构,从而改变其溶解性能,所制得的精粉用于本发明产品的制作,与其他原料混合溶解时不易结团、糊口,溶解更均匀,颗粒饮料加水溶解后,饮品粘稠度适中,口感细腻,风味更佳。
综上所述,本发明提供了一种具有保健功能的速溶型蕨菜魔芋罗汉果复合颗粒饮料,加水溶解即可饮用,饮用方便,味道清新,甜度适中,稍带粘稠,口感细腻,风味好,热量低,且具有清热清肺、利咽化痰、润肠通便、开胃化食、抗菌抗癌、以及降血压、降血糖、降血脂的功效,还可滋阴润肺、补脾和胃,特别适合高血脂、痰湿体质、肥胖人群食用。

下面的实施例可以帮助本领域的技术人员更全面的理解本发明,但不可以以任何方式限制本发明。
实施例1
一种蕨菜魔芋罗汉果复合颗粒饮料,该饮料由下列重量百分比的原料制备而成:蕨菜浆65%、魔芋精粉7%、罗汉果提取液16%、辅料添加物12%;
其中,所述辅料添加物由如下重量份的辅料制成:银耳10份、茯苓6份;具体制备方法为:将所述重量份的辅料分别粉碎成粉末,过60目筛,而后混匀,再按质量比为1:1的比例加水熬成糊状,即为所述辅料添加物;
所述蕨菜浆通过如下方法制得:选用茎杆粗壮、肥大多汁、肉厚、无腐烂、无虫害、无病毒的新鲜蕨菜;经洗净、除杂后,切段;放入80℃质量分数为0.3%的柠檬酸溶液中,热烫2min后取出,沥干;而后用打浆机打成浆,加入等量水后用胶体磨磨细,再用高压均质机在50℃、30MPa条件下进行均质处理,即得蕨菜浆;
所述魔芋精粉通过如下方法制得:在魔芋粉中加入魔芋粉总重量3倍水,持续搅拌充分混匀后,超声处理5min,而后静置40min使其充分溶胀,再将溶胀后的魔芋粉铺展开,厚度为0.1-0.2cm,然后置于70℃条件下干燥至含水率小于5%,再采用超微粉碎机进行粉碎,过300目筛,即得魔芋精粉;
所述罗汉果提取液通过如下方法制得:取罗汉果,碾碎后加入罗汉果质量8倍的水浸泡10min,而后在80℃条件下恒温提取20min,纱布过滤,取滤液;再在温度为45℃,真空度为0.02MPa的条件下,将滤液浓缩至质量浓度为45%,即得所述罗汉果提取液。
上述蕨菜魔芋罗汉果复合颗粒饮料的制备方法为:按照所述重量百分比取所述原料,将蕨菜浆、罗汉果提取液、辅料添加物充分混匀,而后边搅拌边缓慢加入魔芋精粉,制得混合液;采用高压均质机对混合后的物料进行均质,优选均质温度为30℃,压力为20MPa;而后将均质后的物料放入旋转蒸发器中真空浓缩,浓缩至水分为25%,制得软料;进而将软料放入制粒机中过8目筛制成颗粒,而后将所得颗粒放入沸腾床干燥机中干燥至含水率小于5%;除去干燥后颗粒中的粉末后,包装制得成品复合颗粒饮料。
实施例2
一种蕨菜魔芋罗汉果复合颗粒饮料,该饮料由下列重量百分比的原料制备而成:蕨菜浆70%、魔芋精粉8%、罗汉果提取液12%、辅料添加物10%;
其中,所述辅料添加物由如下重量份的辅料制成:银耳15份、茯苓9份;具体制备方法为:将所述重量份的辅料分别粉碎成粉末,过70目筛,而后混匀,再按质量比为1:1的比例加水熬成糊状,即为所述辅料添加物;
所述蕨菜浆通过如下方法制得:选用茎杆粗壮、肥大多汁、肉厚、无腐烂、无虫害、无病毒的新鲜蕨菜;经洗净、除杂后,切段;放入83℃质量分数为0.5%的柠檬酸溶液中,热烫3min后取出,沥干;而后用打浆机打成浆,加入等量水后用胶体磨磨细,再用高压均质机在50℃、30MPa条件下进行均质处理,即得蕨菜浆;
所述魔芋精粉通过如下方法制得:在魔芋粉中加入魔芋粉总重量4倍水,持续搅拌充分混匀后,超声处理6min,而后静置50min使其充分溶胀,再将溶胀后的魔芋粉铺展开,厚度为0.1-0.2cm,然后置于80℃条件下干燥至含水率小于5%,再采用超微粉碎机进行粉碎,过400目筛,即得魔芋精粉;
所述罗汉果提取液通过如下方法制得:取罗汉果,碾碎后加入罗汉果质量9倍的水浸泡15min,而后在75℃条件下恒温提取25min,纱布过滤,取滤液;再在温度为50℃,真空度为0.025MPa的条件下,将滤液浓缩至质量浓度为43%,即得所述罗汉果提取液。
上述蕨菜魔芋罗汉果复合颗粒饮料的制备方法为:按照所述重量百分比取所述原料,将蕨菜浆、罗汉果提取液、辅料添加物充分混匀,而后边搅拌边缓慢加入魔芋精粉,制得混合液;采用高压均质机对混合后的物料进行均质,优选均质温度为35℃,压力为22MPa;而后将均质后的物料放入旋转蒸发器中真空浓缩,浓缩至水分为22%,制得软料;进而将软料放入制粒机中过9目筛制成颗粒,而后将所得颗粒放入沸腾床干燥机中干燥至含水率小于5%;除去干燥后颗粒中的粉末后,包装制得成品复合颗粒饮料。
实施例3
一种蕨菜魔芋罗汉果复合颗粒饮料,该饮料由下列重量百分比的原料制备而成:蕨菜浆65%、魔芋精粉7%、罗汉果提取液16%、辅料添加物12%;
其中,所述辅料添加物由如下重量份的辅料制成:银耳20份、茯苓12份;具体制备方法为:将所述重量份的辅料分别粉碎成粉末,过80目筛,而后混匀,再按质量比为1:1的比例加水熬成糊状,即为所述辅料添加物;
所述蕨菜浆通过如下方法制得:选用茎杆粗壮、肥大多汁、肉厚、无腐烂、无虫害、无病毒的新鲜蕨菜;经洗净、除杂后,切段;放入85℃质量分数为0.7%的柠檬酸溶液中,热烫3min后取出,沥干;而后用打浆机打成浆,加入等量水后用胶体磨磨细,再用高压均质机在50℃、30MPa条件下进行均质处理,即得蕨菜浆;
所述魔芋精粉通过如下方法制得:在魔芋粉中加入魔芋粉总重量5倍水,持续搅拌充分混匀后,超声处理8min,而后静置60min使其充分溶胀,再将溶胀后的魔芋粉铺展开,厚度为0.1-0.2cm,然后置于90℃条件下干燥至含水率小于5%,再采用超微粉碎机进行粉碎,过500目筛,即得魔芋精粉;
所述罗汉果提取液通过如下方法制得:取罗汉果,碾碎后加入罗汉果质量10倍的水浸泡20min,而后在70℃条件下恒温提取30min,纱布过滤,取滤液;再在温度为55℃,真空度为0.03MPa的条件下,将滤液浓缩至质量浓度为40%,即得所述罗汉果提取液。
上述蕨菜魔芋罗汉果复合颗粒饮料的制备方法为:按照所述重量百分比取所述原料,将蕨菜浆、罗汉果提取液、辅料添加物充分混匀,而后边搅拌边缓慢加入魔芋精粉,制得混合液;采用高压均质机对混合后的物料进行均质,优选均质温度为40℃,压力为25MPa;而后将均质后的物料放入旋转蒸发器中真空浓缩,浓缩至水分为20%,制得软料;进而将软料放入制粒机中过10目筛制成颗粒,而后将所得颗粒放入沸腾床干燥机中干燥至含水率小于5%;除去干燥后颗粒中的粉末后,包装制得成品复合颗粒饮料。
虽然,上文中已经用一般性说明及具体实施方案对本发明作了详尽的描述,但在本发明基础上,可以对之作一些修改或改进,这对本领域技术人员而言是显而易见的。因此,在不偏离本发明精神的基础上所做的这些修改或改进,均属于本发明要求保护的范围。
Claims (3)
1.一种蕨菜魔芋罗汉果复合颗粒饮料,其特征在于该饮料由下列重量百分比的原料制备而成:蕨菜浆65-75%、魔芋精粉7-10%、罗汉果提取液10-16%、辅料添加物5-12%;
其中,所述辅料添加物由如下重量份的辅料制成:银耳10-20份、茯苓6-12份;具体制备方法为:将所述重量份的辅料分别粉碎成粉末,过60-80目筛,而后混匀,再按质量比为1:1的比例加水熬成糊状,即为所述辅料添加物;
所述蕨菜浆通过如下方法制得:选用茎杆粗壮、肥大多汁、肉厚、无腐烂、无虫害、无病毒的新鲜蕨菜;经洗净、除杂后,切段;放入80-85℃质量分数为0.3%-0.7%的柠檬酸溶液中,热烫2-3min后取出,沥干;而后用打浆机打成浆,加入等量水后用胶体磨磨细,再用高压均质机在50℃、30MPa条件下进行均质处理,即得蕨菜浆;
所述魔芋精粉通过如下方法制得:在魔芋粉中加入魔芋粉总重量3-5倍水,持续搅拌充分混匀后,超声处理5-8min,而后静置40-60min使其充分溶胀,再将溶胀后的魔芋粉铺展开,厚度为0.1-0.2cm,然后置于70-90℃条件下干燥至含水率小于5%,再采用超微粉碎机进行粉碎,过300-500目筛,得魔芋精粉;
所述罗汉果提取液通过如下方法制得:取罗汉果,碾碎后加入罗汉果质量8-10倍的水浸泡10-20min,而后在70-80℃条件下恒温提取20-30min,纱布过滤,取滤液;再在温度为45-55℃,真空度为0.02-0.03MPa的条件下,将滤液浓缩至质量浓度为40%-45%,即得所述罗汉果提取液。
2.如权利要求1所述的蕨菜魔芋罗汉果复合颗粒饮料的制备方法,其特征在于,所述制备方法包括如下步骤:
1)按照所述重量百分比取所述原料,将蕨菜浆、罗汉果提取液、辅料添加物充分混匀,而后边搅拌边缓慢加入魔芋精粉,制得混合液;
2)采用高压均质机对步骤1)所得混合液进行均质;
3)将经步骤2)均质后的物料放入旋转蒸发器中真空浓缩,浓缩至水分为20-25%,制得软料;
4)将步骤3)所得的软料放入制粒机中过8-10目筛制成颗粒,而后将所得颗粒放入沸腾床干燥机中干燥至含水率小于5%;
5)除去步骤4)干燥后颗粒中的粉末,包装,制得成品复合颗粒饮料。
3.如权利要求2所述的蕨菜魔芋罗汉果复合颗粒饮料的制备方法,其特征在于,步骤2)中,均质温度为30-40℃,压力为20-25MPa。
