板栗又名栗、中国板栗,营养丰富,板栗富含蛋白质、脂肪、碳水化合物、钙、磷、铁、锌、多种维生素等营养成分,有健脾养胃、补肾强筋、活血止血、益气和消肿强心之功效,孕妇常吃板栗不仅可以健身壮骨,而且有利于骨盆的发育成熟,还有消除疲劳的作用,适合于治疗肾虚引起的腰膝酸软、腰腿不利、小便增多,和脾胃虚寒引起的慢性腹泻,以及外伤后引起的骨折、瘀血肿痛和筋骨疼痛等症,而且炒熟的板栗味道香甜、可口,是一道非常不错的美食,是日常生活中人们喜爱的一种保健食品,同时也是蛋糕店和餐饮店常用的一种食物原料,目前市场上的板栗产品只要是以单一的板栗仁加入白砂糖所制成的板栗蓉为主,并无添加其他保健成分,使所得的板栗产品保健功效单一,且口感甜腻、热量高,不宜多食,不能满足不同市场和人群的需求。

为弥补现有技术的不足,本发明提供一种保健板栗及其制备方法,将具有多种保健功效的天然水果和药食同源功效的食物成分添加入板栗仁中,使制得的板栗产品具有口感清爽、不甜腻、低热量、美容养颜、健脾养胃和补肾益气等多种保健功效,解决了现有用单一板栗仁加工所得产品保健功效单一和口感甜腻等缺陷,能满足不同市场和人群的需求。

本发明所述的保健板栗,包括以下原料和重量份数:
板栗 150-200份
荸荠 50-80份
桃金娘 20-40份
桑葚 30-50份
红糖 10-30份
蜂蜜 10-30份
水牛奶 10-25份
食用油 3-5份。

以上所述的桃金娘,别名:哆尼、岗菍、山菍、多莲、当梨根、稔子树、豆稔、仲尼、乌肚子、当泥,拉丁文名:Rhodomyrtus tomentosa.,属桃金娘科,果实为浆果,未成熟时为绿色,成熟果为紫黑色浆果,味甘,可食,也可酿酒,果可食用,全株供药用,有活血通络,收敛止泻,补虚止血的功效,桃金娘果实含有较为全面的营养成分,其中含粗脂肪7.97%、粗蛋白6.21%、粗纤维34.97%、木质素31.76%、总糖18.53t%、还原糖15.52%、维生素C28.8%、维生素H10.19mg/100g、S一胡萝卜素0.388mg/100g,更有丰富的氨基酸,其中天门氡氨酸含量高达124.7mg/L、缬氨酸71.7mg/L、色氨酸44.2mg/L、丙氨酸43.9mg/L、谷氨酸42.7mg/L,而多种人体所需的矿物质中,钙、镁更高达56.10μg/g,果实的构成糖中大量的为中性单糖,尤其在鲜果中含有更高的果胶多糖,桃金娘是纯天然野生水果,无化肥和农药污染,属第1代开发的水果,符合当前消费者“回归自然”开发消费绿色食品的心理要求,又是一种高锰富集植物,其医疗保健价值很高,特别是珠江三角洲缺锰地区,桃金娘食品作为有机锰的补充来源,对预防肝癌、肝炎等疾病具有重要意义。

以上所述的水牛奶,是由水牛产出的奶,水牛奶是地方特色产品,在中国,只有广东、江西、广西等五个省份有水牛,广西是中国目前最大的水牛奶产量地区,水牛奶营养价值高,其干物质含量高达18.4%,比普通黑白花牛高近50%;乳脂率含量为7.9%,而普通牛奶一般是3%~3.5%,水牛奶中所含蛋白质、氨基酸,乳脂、维生素、微量元素等均高于黑白花牛奶,据国家有关科研部门测定,水牛奶质十分优良,可称得上是奶中极品,其价值相当于黑白花牛奶的二倍,最适宜儿童生长发育和抗衰老的锌、铁、钙含量特别高,氨基酸、维生素含量非常丰富,是老幼皆宜的营养食品,据专家研究,水牛奶的干物质含量是18.9%,分别比黑白花牛奶及人乳高19%和27%;蛋白质和脂肪含量分别是黑白花牛奶和人乳的1.5倍到3倍,水牛奶乳化特性好,100kg的水牛奶可生产25kg奶酪,而相同量的黑白花牛奶只能生产12.5kg奶酪,此外,水牛奶矿物质含量和维生素含量也都优于黑白花奶牛和人乳,铁和维生素A的含量分别是黑白花牛奶的约80倍和40倍,并被认为是最好的补钙、补磷食品之一,水牛奶乳汁香醇浓厚,无膻味,直接饮用香浓可口,水牛奶的胆固醇低,维生素、微量元素丰富,尤其是酪蛋白含量高,能进行高质量乳制品的深加工,作为商业上极有价值的成分,水牛奶的脂肪、蛋白质、乳糖的含量是黑白花牛奶的数倍,矿物质和维生素含量也是黑白花牛奶和人乳的数十倍,水牛奶除了普通牛奶所含的营养物质之外还含有许多功能物质,例如酪蛋白磷酸肽,可防止人体内磷酸钙结晶的形成或不溶性磷酸钙沉淀的生成,并促进肠绒膜对钙、铁、硒等矿物质的吸收,类吗啡活性肽具有镇痛、调节人体情绪、呼吸、脉搏、体温、消化系统及内分泌等功能,抗高血压肽和抗血栓肽可抑制血管紧张素的产生,对血压进行调节,起到抗高血压的作用,免疫调节肽可以预防和治疗肠道微生物的干扰,近年研究出在抗衰老、抗过敏和抗炎症方面也有显著疗效,水牛奶是一种营养丰富、全面,消化吸收率高的一种优质奶,因此水牛奶被认为是世界上最具竞争力的乳产品之一,目前,世界上水牛奶系列产品的开发主要定位于高附加值的奶制品,如奶酪等,同时也被开发成市场容量大、高质量的灭菌乳、酸乳等纯乳产品或含乳饮料作为一类高级营养食品,水牛奶制品日渐成人们消费的“新宠”。
本发明所述的保健板栗,其具体制备过程如下:
(1)将板栗去壳去皮,去除杂物,得到板栗仁,用清水清洗干净,放入蒸笼中蒸至熟透,取出放凉,加入水牛奶并放入搅拌机搅拌成泥状,得到板栗蓉,备用;
(2)将荸荠用清水清洗干净,去除杂物污物,去皮,放入粉碎机中粉碎成80-100目碎粒,得到荸荠粒,备用;
(3)挑选完全成熟、无变质和无虫害污染的桃金娘和桑葚用清水清洗干净,加入其重量份1倍的水,放入搅拌机打成浆液,将上述所得的浆液用150-200目纱布进行过滤,得到滤液,将滤液放入喷雾干燥机内制成粉末,得到水果粉末,备用;
(4)将步骤(1)(2)(3)所得的板栗蓉、荸荠粒、水果粉末和水牛奶放入搅拌机内混合搅拌均匀,得到板栗混合物,备用;
(5)将步骤(4)所得的板栗混合物加入蜂蜜、食用油放入温度为40-60℃的容器内进行搅拌加热至板栗混合物呈泥状,取出放凉,得到板栗产品;
(6)将步骤(5)所得的板栗产品进行真空包装和辐照杀菌后放入温度0-4℃的环境下保存。
本发明的保健板栗及其制备方法的有益效果是:
1保健功效多样。本发明在板栗中添加了荸荠、桃金娘、桑葚、红糖和蜂蜜,使制成的板栗产品具有营养全面、增强免疫力、美容养颜、补肝益肾、养胃健脾、补充能量和预防疾病等多种保健功效,解决了板栗保健功效单一的问题。
2食用方便。本发明可随意包装成不同的份量,方便随身携带,开袋即食。
3口感好。本发明添加了多种水果成分,使板栗产品除具有其本身的香甜气之外,更具有水果天然的清香气味,使食用时口感丰富、清爽不甜腻,风味独特。
具体实施方式
实施例1:
本发明所述的保健板栗,由以下原料以及重量份组合制成:板栗150份、荸荠50份、桃金娘10份、桑葚30份、红糖10份、蜂蜜10份、水牛奶10份和食用油3份。
其具体制作步骤如下:
(1)将板栗去壳去皮,去除杂物,得到板栗仁,用清水清洗干净,放入蒸笼中蒸至熟透,取出放凉,加入水牛奶并放入搅拌机搅拌成泥状,得到板栗蓉,备用;
(2)将荸荠用清水清洗干净,去除杂物污物,去皮,放入粉碎机中粉碎成80目碎粒,得到荸荠粒,备用;
(3)挑选完全成熟、无变质和无虫害污染的桃金娘和桑葚用清水清洗干净,加入其重量份1倍的水,放入搅拌机打成浆液,将上述所得的浆液用150目纱布进行过滤,得到滤液,将滤液放入喷雾干燥机内制成粉末,得到水果粉末,备用;
(4)将步骤(1)(2)(3)所得的板栗蓉、荸荠粒、水果粉末和水牛奶放入搅拌机内混合搅拌均匀,得到板栗混合物,备用;
(5)将步骤(4)所得的板栗混合物加入蜂蜜、食用油放入温度为40℃的容器内进行搅拌加热至板栗混合物呈泥状,取出放凉,得到板栗产品;
(6)将步骤(5)所得的板栗产品进行真空包装和辐照杀菌后放入温度0-4℃的环境下保存。
实施例2:
本发明所述的保健板栗,由以下原料以及重量份组合制成:板栗180份、荸荠65份、桃金娘20份、桑葚40份、红糖15份、蜂蜜20份、水牛奶15份和食用油4份。
其具体制作步骤如下:
(1)将板栗去壳去皮,去除杂物,得到板栗仁,用清水清洗干净,放入蒸笼中蒸至熟透,取出放凉,加入水牛奶并放入搅拌机搅拌成泥状,得到板栗蓉,备用;
(2)将荸荠用清水清洗干净,去除杂物污物,去皮,放入粉碎机中粉碎成90目碎粒,得到荸荠粒,备用;
(3)挑选完全成熟、无变质和无虫害污染的桃金娘和桑葚用清水清洗干净,加入其重量份1倍的水,放入搅拌机打成浆液,将上述所得的浆液用180目纱布进行过滤,得到滤液,将滤液放入喷雾干燥机内制成粉末,得到水果粉末,备用;
(4)将步骤(1)(2)(3)所得的板栗蓉、荸荠粒、水果粉末和水牛奶放入搅拌机内混合搅拌均匀,得到板栗混合物,备用;
(5)将步骤(4)所得的板栗混合物加入蜂蜜、食用油放入温度为50℃的容器内进行搅拌加热至板栗混合物呈泥状,取出放凉,得到板栗产品;
(6)将步骤(5)所得的板栗产品进行真空包装和辐照杀菌后放入温度0-4℃的环境下保存。
实施例3:
本发明所述的保健板栗,由以下原料以及重量份组合制成:板栗200份、荸荠80份、桃金娘30份、桑葚50份、红糖20份、蜂蜜30份、水牛奶20份和食用油5份。
其具体制作步骤如下:
(1)将板栗去壳去皮,去除杂物,得到板栗仁,用清水清洗干净,放入蒸笼中蒸至熟透,取出放凉,加入水牛奶并放入搅拌机搅拌成泥状,得到板栗蓉,备用;
(2)将荸荠用清水清洗干净,去除杂物污物,去皮,放入粉碎机中粉碎成100目碎粒,得到荸荠粒,备用;
(3)挑选完全成熟、无变质和无虫害污染的桃金娘和桑葚用清水清洗干净,加入其重量份1倍的水,放入搅拌机打成浆液,将上述所得的浆液用200目纱布进行过滤,得到滤液,将滤液放入喷雾干燥机内制成粉末,得到水果粉末,备用;
(4)将步骤(1)(2)(3)所得的板栗蓉、荸荠粒、水果粉末和水牛奶放入搅拌机内混合搅拌均匀,得到板栗混合物,备用;
(5)将步骤(4)所得的板栗混合物加入蜂蜜、食用油放入温度为60℃的容器内进行搅拌加热至板栗混合物呈泥状,取出放凉,得到板栗产品;
(6)将步骤(5)所得的板栗产品进行真空包装和辐照杀菌后放入温度0-4℃的环境下保存。
Claims (3)
1.一种保健板栗,其特征在于:包括板栗、荸荠、桃金娘、桑葚、红糖和蜂蜜。
2.根据权利要求1所述的保健板栗,其特征在于:由如下重量份的原料组合制成:
板栗 150-200份
荸荠 50-80份
桃金娘 20-40份
桑葚 30-50份
红糖 10-30份
蜂蜜 10-30份
水牛奶 10-25份
食用油 3-5份。
3.根据权利要求1所述的保健板栗及其制备方法,其特征在于:具体制作步骤如下:
(1)将板栗去壳去皮,去除杂物,得到板栗仁,用清水清洗干净,放入蒸笼中蒸至熟透,取出放凉,加入水牛奶并放入搅拌机搅拌成泥状,得到板栗蓉,备用;
(2)将荸荠用清水清洗干净,去除杂物污物,去皮,放入粉碎机中粉碎成80-100目碎粒,得到荸荠粒,备用;
(3)挑选完全成熟、无变质和无虫害污染的桃金娘和桑葚用清水清洗干净,加入其重量份1倍的水,放入搅拌机打成浆液,将上述所得的浆液用150-200目纱布进行过滤,得到滤液,将滤液放入喷雾干燥机内制成粉末,得到水果粉末,备用;
(4)将步骤(1)(2)(3)所得的板栗蓉、荸荠粒、水果粉末和水牛奶放入搅拌机内混合搅拌均匀,得到板栗混合物,备用;
(5)将步骤(4)所得的板栗混合物加入蜂蜜、食用油放入温度为40-60℃的容器内进行搅拌加热至板栗混合物呈泥状,取出放凉,得到板栗产品;
(6)将步骤(5)所得的板栗产品进行真空包装和辐照杀菌后放入温度0-4℃的环境下保存。
