本发明涉及一种玫瑰养颜面包及其制作方法,属于食品加工领域,所述玫瑰养颜面包的原料包括高筋面粉,燕麦粉,绿豆粉,木瓜粉,鸡蛋,玫瑰花,山楂,草莓,番茄,桑树皮,甘草,谷精草,青葙子,使君子,决明子,半边莲,橄榄油,木糖醇,酵母,猪脚汤,水。制作方法为:取上述原料,再经制作中草药粉、制作营养液、制作面包胚、一次发酵、面团成型、二次发酵、烘烤等工序制作而得。本发明所提供的玫瑰养颜面包不含添加剂,且制作方法简单,其中,木糖醇代替白糖,具有高甜度、低热能的特点,添加玫瑰花、果蔬使得面包风味独特,色泽美丽,且赋予面包美容养颜的功能,添加中草药使面包具有清肝明目、清热解毒、健脾补肾等保健功效。

本发明涉及食品加工领域,尤其是一种玫瑰养颜面包及其制作方法。
【背景技术】
面包,就是以黑麦、小麦等粮食作物为基本原料,先磨成粉,再加入水、盐、酵母等和面并制成面团坯料,然后再以烘、烤、蒸、煎等方式加热制成的食品,属于烤制面食,有制作简单、携带方便等特点,也因其口感多样,做为早餐或辅食,被广大人群所喜爱。随着人们生活水平的提高,人们特别是女性对养颜保健的要求也逐渐升高,目前市面上的面包含糖量很高,不仅没有美容养颜的功效,吃多了反而容易引起肥胖,且市面上的面包口味单一,吃多会腻,也没有保健功能,不能满足人们的需求,另外,市售的面包热量高,易上火,不能多吃。
【发明内容】
针对现有技术的不足,本发明的目的是提出一种口味独特,含糖量低且有美容养颜、健脾补肾、辛热解表,清肝明目等保健功能,吃了不易上火的玫瑰养颜面包。
为实现上述目的,本发明提供以下技术方案:
一种玫瑰养颜面包,该玫瑰养颜面包主要由以下重量份的原料制作而成:高筋面粉150-250份,燕麦粉50-80份,绿豆粉30-50份,木瓜粉20-35份,鸡蛋50-100份,玫瑰花15-20,山楂10-15份,草莓10-15份,番茄10-15份,桑树皮4-8份,甘草2-10份,谷精草4-8份,青葙子4-8份,使君子4-8份,决明子4-8份,半边莲4-8份,芥花籽油10-30份,木糖醇10-20份,酵母5-8份,猪脚汤适量,水适量。
进一步地,一种玫瑰养颜面包,主要由以下重量份的原料制作而成:高筋面粉180-220份,燕麦粉60-70份,绿豆粉35-45份,木瓜粉25-30份,鸡蛋60-80份,玫瑰花16-18份,山楂12-14份,草莓12-14份,番茄12-14份,桑树皮5-7份,甘草4-8份,谷精草5-7份,青葙子5-7份,使君子5-7份,决明子5-7份,半边莲5-7份,橄榄油15-25份,木糖醇12-17份,酵母6-7份,猪脚汤适量,水适量。

本发明还提供了上述所述玫瑰养颜面包的制作方法,具体包括如下步骤:
1)制作中草药粉:将桑树皮,甘草,谷精草,青葙子,使君子,决明子,半边莲洗净混合,放入打粉机中打碎至过100目筛,得到中草药粉待用;
2)制作营养液:将山楂去核洗净,放入开水中煮5-7分钟,取出晾干后加入洗干净的玫瑰花瓣,两者混合,捣烂成泥,得到玫瑰山楂泥待用;将草莓和番茄洗净,放入榨汁机中压榨成汁,得到水果汁待用;将玫瑰山楂泥和水果汁混合搅拌均匀,制得营养液待用;
3)制作面包胚:将所述重量份的高筋面粉、燕麦粉、绿豆粉、木瓜粉、鸡蛋、橄榄油、木糖醇、酵母以及步骤1)所得中草药粉,步骤2)所得营养液充分混合,一边加入猪脚汤一边搅拌,再揉成团状,得到面包胚;
4)一次发酵:将步骤3)所得面包胚放入面包机内进行第一次发酵,发酵温度为25-40℃,发酵时间为2-4小时;
5)面团成型:取出面包胚,将其分割为小面团,面团形状可根据喜好制作成条形或圆形;
6)二次发酵:将成型后的面团再次放入面包机进行二次发酵,发酵温度为50-80℃,相对湿度为80%-90%,发酵时间为1-2小时;
7)烘烤:在烤箱桶内刷上一层油,然后把二次发酵后的面团放入烤箱内,并在表面刷上蛋液,再按下烘烤模式,设置温度为150℃,烘烤30分钟,冷却后取出即可。
进一步地,所述步骤7)中放入烤箱烘烤前需将烤箱温度调至120-150℃预热4-7分钟。

本发明中部分原料的相关特性如下:
燕麦粉,性平、味甘;归肝,脾,胃。富含可溶性的膳食纤维,有着许多有利于健康的低密度脂肪蛋白,促使甘油三酯得到降低的同时,还能促使胆固醇排泄,起到防止糖尿病的作用,有效地减少糖尿病血管并发症的发生。其次,可以有效的通便,有助于轻松排泄,预防便秘,对有习惯性便秘的人们来说有很好的作用;另外,燕麦粉里面有丰富的维生素B1、B2、E以及叶酸,可以帮助人体改善血液循环,还能缓解生活工作中带来的压力。而富含钙、钙、磷、铁、锌、锰等矿物质也有预防骨质疏松、促进伤口愈合、防止贫血的功效。而且燕麦粉处于低热量食物,吃了之后会有明显的饱腹感,但又不担心容易发胖。
绿豆粉,味甘、性寒。归心、胃经。有清热解毒、止渴消暑、利尿润肤的功效,还有一定的祛铅毒功效,绿豆粉因其含有大量蛋白质、B族维生素以及钙、磷、铁等矿物质,故有增白、淡化斑点、清洁肌肤、去除角质、抑制青春痘的功效。
木瓜粉,味酸,性温;归肝、脾经。含有丰富的木瓜酶、柠檬酶、胡萝卜素、蛋白质、维生素C、B及钙、磷等矿物质等,具有丰胸、调节内分泌、防治高血压、肾炎、便秘及助消化、治胃病、美容、护肤、养颜等功效,对人体有促进新成代谢和抗衰老的作用。
玫瑰花,味甘、微苦,性温;归肝、脾经。含丰富的维生素A、C、B、E、K以及单宁酸,能改善内分泌失调,对消除疲劳和伤口瘀合也有帮助。还可调气血,调理女性生理问题,促进血液循环,调经,利尿,缓和肠胃神经,防皱纹,防冻伤,养颜美容。
山楂,味甘酸,性微温;归脾、胃、肝经。山楂能够开胃消食、活血化瘀,还能提高人体免疫力,抗衰老、调节血糖和血脂。
草莓,味酸甘,性凉,归肺、脾经。草莓功效与作用:1.草莓中所含的胡萝卜素是合成维生素A的重要物质,具有明目养肝作用;2.草莓对胃肠道和贫血均有一定的滋补调理作用;3.草莓除可以预防坏血病外,对防治动脉硬化,冠心病也有较好的疗效;4.草莓是鞣酸含量丰富的植物,在体内可吸附和阻止致癌化学物质的吸收,具有防癌作用;5.草莓中含有天冬氨酸,可以自然平和的清除体内的重金属离子,草莓色泽鲜艳,果实柔软多汁,香味浓郁,甜酸适口,营养丰富。
番茄,味甘、酸,性凉,微寒。能清热止渴,养阴,凉血,归肝、胃、肺经。具有生津止渴,健胃消食,清热解毒,凉血平肝,补血养血和增进食欲的功效。可治口渴,食欲不振等多种疾病。
桑树皮,味苦、甘,性寒,入肺肝经,有疏风清热,凉血止血,清肝明目,润肺止咳之功。常用于治疗风热感冒、肺热咳嗽、肝阳头痛眩晕、目赤昏花、血热出血及盗汗等证。现代还用于治疗下肢象皮肿。可内服、外用,也曾被制成注射液。此外,把鲜桑叶摘破叶脉后取其渗出的白色液汁,药名叫桑叶汁,味苦性微寒,功擅解毒清热止血,主治痈疖、瘿瘤、外伤出血及蜈蚣咬伤等。桑叶的蒸馏液还可用于治疗目疾。
甘草,味甘,性平;归心、脾、肺、胃经。具补脾、润肺、解毒、调和诸药的功能。主治脾虚食少,胃、十二指肠溃疡、咳嗽、支气管炎等。甘草是一味常用的中药,可减低或缓解其他药物的偏性、毒性,具辅助、协调、矫味作用即和药性的作用,被美誉为“国老”。
谷精草,味甘,性平;归肝、胃经。祛风散热,明目退翳。治目翳,雀盲,头痛,齿痛,喉痹,鼻衄。
青葙子,味苦,性微寒,归肝经。祛风热,清肝火。治目赤肿痛,障翳,高血压,鼻衄,皮肤风热瘙痒,疥癞。
使君子,味甘,性温,归脾、胃经。可杀虫,消积,健脾。治疗蛔虫腹痛,小儿疳积,乳食停滞,腹胀,泻痢。
决明子,味苦、甘、咸,性微寒,入肝、肾、大肠经;有润肠通便,降脂明目之功效,可治疗便秘及高血脂,高血压。清肝明目,利水通便,有缓泻作用,降血压降血脂。
半边莲,辛,寒。归心、小肠、肺经。主治利水,消肿,解毒,治黄疸,水肿,臌胀,泄泻,痢疾,蛇伤,疔疮,肿毒,湿疹,癣疾,跌打扭伤肿痛。用于大腹水肿、面足浮肿、痈肿疔疮、蛇虫咬伤、晚期血吸虫病腹水。
猪脚,味甘、咸,性平。含有大量的胶原蛋白质,它在烹调过程中可转化成明胶。明胶具有网状空间结构,它能结合许多水,增强细胞生理代谢,有效地改善机体生理功能和皮肤组织细胞的储水功能,使细胞得到滋润,保持湿润状态,防止皮肤过早褶皱,延缓皮肤的衰老过程。猪蹄对于经常性的四肢疲乏、腿部抽筋、麻木、消化道出血、失血性休克胶缺血性脑患者有一定辅助疗效。
综上所述,由于采用了上述技术方案,本发明的有益效果是:
1.本发明的玫瑰养颜面包主要原料为高筋面粉、燕麦粉和绿豆粉,燕麦有助于降低血糖,防止糖尿病的发生,并且燕麦食用后会产生明显饱腹感,可减少人们的进食量,对减肥大有好处,绿豆使清热解毒的佳品,在面包中加入这两种成分不仅改善面包的口感,也丰富了面包的营养,适合三高人群食用。
2.本发明的玫瑰养颜面包在面包中添加了玫瑰,玫瑰香气芬芳更是美容的营养师,食用含有玫瑰面包可调理气血,促进血液循环,起到美容之功效,还添加了草莓、山楂和西红柿,这些成分含有丰富的维生素,可健胃消食,促进消化,同时还改善了面包的色泽;另外,山楂、草莓使面包具有酸甜味,改善了面包的口感,且食用起来无腻味。
3.本发明的玫瑰养颜面包添加了几味中草药,桑树皮,疏风清热,凉血止血;甘草,润肺解毒;谷精草、青葙子、使君子、决明子具有清肝明目,改善视力降低血脂血压等功效;半边莲,清热解毒,活血化瘀;各成分相互配合和促进,对人体有益的成分和功效大大提高,通过上述各成分之间的相互作用,使其性状更加温和,非常利于人体吸收,上述成分使面包具有行气和胃、清肝明目、辛热解表等保健功效,有效改善面包食用过后的上火问题,使面包变成不仅是充饥果腹的点心,还可防病治病,养生强体。
4.本发明的玫瑰养颜面包制作方法简单,制作过程不添加任何有害物质,采用猪脚汤和面,猪脚中含有丰富的胶原蛋白充分吸收到面包中,使面包散发着猪脚的香味,并且具备美容养颜,增强肌肤代谢,延缓皮肤衰老的作用。
【具体实施方式】
下面的实施例可以帮助本领域的技术人员更全面地理解本发明,但不可以以任何方式限制本发明。
实施例1
一种玫瑰养颜面包,主要由以下重量份的原料制成:高筋面粉150份,燕麦粉50份,绿豆粉30份,木瓜粉20份,鸡蛋50份,玫瑰花15份,山楂10份,草莓10份,番茄10份,桑树皮4份,甘草2份,谷精草4份,青葙子4份,使君子4份,决明子4份,半边莲4份,橄榄油10份,木糖醇10份,酵母5份,猪脚汤适量,水适量。
应用上述原料配比制作一种玫瑰养颜面包,具体步骤如下:
1)制作中草药粉:将干料桑树皮,甘草,谷精草,青葙子,使君子,决明子,半边莲洗净混合,放入打粉机中打碎至过100目筛,得到中草药粉待用;
2)制作营养液:将山楂去核洗净,放入开水中煮5分钟,取出晾干后加入洗干净的玫瑰花瓣,两者混合,捣烂成泥,得到玫瑰山楂泥待用;将草莓和番茄洗净,放入榨汁机中压榨成汁,得到水果汁待用;将玫瑰山楂泥和水果汁混合搅拌均匀,制得营养液待用;
3)制作面包胚:将所述重量份的高筋面粉、燕麦粉、绿豆粉、木瓜粉、鸡蛋、橄榄油、木糖醇、酵母以及步骤1)所得中草药粉,步骤2)所得营养液充分混合,一边加入猪脚汤一边搅拌,再揉成团状,得到面包胚;
猪脚汤的制作方法包括如下步骤:
a将猪脚洗净砍块;b将桂圆干、党参、姜片、枸杞、红枣、黄芪洗净待用;c将砍好块的猪脚放入加有适量水的锅中,待水煮开后将猪脚捞出洗净;d将所有材料放入锅中熬制2.5小时,放入盐、少量鸡精即可得到猪脚煲;e将猪脚煲中的物料固液分离,得到的液体部分即为所述猪脚汤;
4)一次发酵:将步骤3)所得面包胚放入面包机内进行第一次发酵,发酵温度为25℃,发酵时间为2-4小时;
5)面团成型:取出面包胚,将其分割为小面团,面团形状可根据喜好制作成条形或圆形;
6)二次发酵:将成型后的面团再次放入面包机进行二次发酵,发酵温度为50℃,相对湿度为80%,发酵时间为1小时;
7)烘烤:将烤箱温度调至120℃预热4分钟,在烤箱桶内刷上一层油,然后把二次发酵后的面团放入烤箱内,并在表面刷上蛋液,再按下烘烤模式,设置温度为150℃,烘烤30分钟,冷却后取出即可。
实施例2
一种玫瑰养颜面包,主要由以下重量份的原料制成:高筋面粉200份,燕麦粉65份,绿豆粉40份,木瓜粉30份,鸡蛋70份,玫瑰花18份,山楂12份,草莓12份,番茄12份,桑树皮6份,甘草6份,谷精草6份,青葙子6份,使君子6份,决明子6份,半边莲6份,橄榄油20份,木糖醇15份,酵母6份,猪脚汤适量,水适量。
应用上述原料配比制作一种玫瑰养颜面包,具体步骤如下:
1)制作中草药粉:将干料桑树皮,甘草,谷精草,青葙子,使君子,决明子,半边莲洗净混合,放入打粉机中打碎至过100目筛,得到中草药粉待用;

3)制作面包胚:将所述重量份的高筋面粉、燕麦粉、绿豆粉、木瓜粉、鸡蛋、橄榄油、木糖醇、酵母以及步骤1)所得中草药粉,步骤2)所得营养液充分混合,一边加入猪脚汤一边搅拌,再揉成团状,得到面包胚;
猪脚汤的制作方法包括如下步骤:

7)烘烤:将烤箱温度调至135℃预热5分钟,在烤箱桶内刷上一层油,然后把二次发酵后的面团放入烤箱内,并在表面刷上蛋液,再按下烘烤模式,设置温度为150℃,烘烤30分钟,冷却后取出即可。
实施例3
一种玫瑰养颜面包,主要由以下重量份的原料制成:高筋面粉250份,燕麦粉80份,绿豆粉50份,木瓜粉35份,鸡蛋100份,玫瑰花20份,山楂15份,草莓15份,番茄15份,桑树皮8份,甘草10份,谷精草8份,青葙子8份,使君子8份,决明子8份,半边莲8份,橄榄油30份,木糖醇20份,酵母8份,猪脚汤适量,水适量。
应用上述原料配比制作一种玫瑰养颜面包,具体步骤如下:

猪脚汤的制作方法包括如下步骤:

5)面团成型:取出面包胚,将其分割为小面团,面团形状可根据喜好制作成条形或圆形;
6)二次发酵:将成型后的面团再次放入面包机进行二次发酵,发酵温度为80℃,相对湿度为90%,发酵时间为2小时;
7)烘烤:将烤箱温度调至150℃预热7分钟,在烤箱桶内刷上一层油,然后把二次发酵后的面团放入烤箱内,并在表面刷上蛋液,再按下烘烤模式,设置温度为150℃,烘烤30分钟,冷却后取出即可。
为了更清楚地说明本发明的特色,本发明选取单个重量为70g的面包120个为研究试验对象。以下为4组面包,每组30个,做营养对比试验:
其中A、B、C组面包分别为实施例1-3中的玫瑰养颜面包,D组为一般市面上销售的面包,各组面包的营养分析结果如表1。

从表1我们可以看出,本发明的玫瑰养颜面包相对于市售面包来说脂肪和糖分都低很多,食用更健康,同时,本发明的面包含糖量虽然低但甜味却高于市售面包,因此口感优于市售面包。
另外,本发明随机选择60位健康状况良好的人士进行试吃体验,分为A1、B1、C1、D1组,每组15人,分别食用A、B、C、D组的面包3个,根据食用反馈得出结果:A1、B1、C1组人群普遍表示面包口感佳,面包中添加玫瑰和水果的香味,配合加上淡淡的猪脚香味,吃多了也不腻,面包色泽美丽,看起来很有食欲,且食用过后肌肤状况越来越好,气色佳,另外,在食用过后也没有出现不良反应;而D1组人群反馈到面包味道虽然美味,但吃多了腻,且食用过后都出现了轻微或严重的内热、上火、长痘痘现象。
虽然,上文中已经用一般性说明及具体实施方案对本发明作了详尽的描述,但在本发明基础上,可以对之作一些修改或改进,这对本领域技术人员而言是显而易见的。因此,在不偏离本发明精神的基础上所做的这些修改或改进,均属于本发明要求保护的范围。
Claims (7)
1.一种玫瑰养颜面包,其特征在于:该玫瑰养颜面包主要由以下重量份的原料制作而成:高筋面粉150-250份,燕麦粉50-80份,绿豆粉30-50份,木瓜粉20-35份,鸡蛋50-100份,玫瑰花15-20份,山楂10-15份,草莓10-15份,番茄10-15份,桑树皮4-8份,甘草2-10份,谷精草4-8份,青葙子4-8份,使君子4-8份,决明子4-8份,半边莲4-8份,橄榄油10-30份,木糖醇10-20份,酵母5-8份,猪脚汤适量,水适量。
2.根据权利要求1所述的一种玫瑰养颜面包,其特征在于,主要由以下重量份的原料制作而成:高筋面粉180-220份,燕麦粉60-70份,绿豆粉35-45份,木瓜粉25-30份,鸡蛋60-80份,玫瑰花16-18份,山楂12-14份,草莓12-14份,番茄12-14份,桑树皮5-7份,甘草4-8份,谷精草5-7份,青葙子5-7份,使君子5-7份,决明子5-7份,半边莲5-7份,橄榄油15-25份,木糖醇12-17份,酵母6-7份,猪脚汤适量,水适量。
3.根据权利要求1所述的一种玫瑰养颜面包,其特征在于,主要由以下重量份的原料制作而成:高筋面粉200份,燕麦粉65份,绿豆粉40份,木瓜粉28份,鸡蛋70份,玫瑰花17份,山楂13份,草莓13份,番茄13份,桑树皮6份,甘草7份,谷精草6份,青葙子6份,使君子6份,决明子6份,半边莲6份,橄榄油20份,木糖醇15份,酵母6份,猪脚汤适量,水适量。
4.根据权利要求1所述的一种玫瑰养颜面包,其特征在于,所述桑树皮,甘草,谷精草,青葙子,使君子,决明子,半边莲均为干料;玫瑰花为新鲜花瓣。
5.根据权利要求1-3任一所述玫瑰养颜面包的制作方法,其特征在于,具体包括如下步骤:
1)制作中草药粉:将桑树皮,甘草,谷精草,青葙子,使君子,决明子,半边莲洗净混合,放入打粉机中打碎至过100目筛,得到中草药粉待用;
2)制作营养液:将山楂去核洗净,放入开水中煮5-7分钟,取出晾干后加入洗干净的玫瑰花瓣,两者混合,捣烂成泥,得到玫瑰山楂泥待用;将草莓和番茄洗净,放入榨汁机中压榨成汁,得到水果汁待用;将玫瑰山楂泥和水果汁混合搅拌均匀,制得营养液待用;
3)制作面包胚:将所述重量份的高筋面粉、燕麦粉、绿豆粉、木瓜粉、鸡蛋、橄榄油、木糖醇、酵母以及步骤1)所得中草药粉,步骤2)所得营养液充分混合,一边加入猪脚汤一边搅拌,再揉成团状,得到面包胚;
4)一次发酵:将步骤3)所得面包胚放入面包机内进行第一次发酵,发酵温度为25-40℃,发酵时间为2-4小时;
5)面团成型:取出面包胚,将其分割为小面团,面团形状可根据喜好制作成条形或圆形;
6)二次发酵:将成型后的面团再次放入面包机进行二次发酵,发酵温度为50-80℃,相对湿度为80%-90%,发酵时间为1-2小时;
7)烘烤:在烤箱桶内刷上一层油,然后把二次发酵后的面团放入烤箱内,并在表面刷上蛋液,再按下烘烤模式,设置温度为150℃,烘烤30分钟,冷却后取出即可。
6.根据权利要求5所述玫瑰养颜面包的制作方法,其特征在于,所述步骤7)中放入烤箱烘烤前需将烤箱温度调至120-150℃预热4-7分钟。
7.根据权利要求5所述玫瑰养颜面包的制作方法,其特征在于,所述步骤7)制得的成品质量为40-80g。
