Abstract
"MéTODOS PARA A PREPARAçãO DE COMPOSIçõES DE POLPA DE FRUTA ESTABILIZADA E DE PURê ESTáVEL". é descrita uma polpa de fruta estabilizada que contém pedaços de dimensões de 1 x 1 x 1 mm a 15 x 15 x 15 mm. A polpa de fruta estabilizada não foi exposta a temperaturas que excedem 90 graus centígrados, não tem substancialmente nenhuma polifenol oxidase ativa e é apropriada para o uso nas composições de purê que podem ser usadas em recheios, caldas e pastas.
