Abstract
PROCESO PARA LA OBTENCION DE UNA COMPOSICION ALIMENTICIA A BASE DE CHUFA Y PLATANO. SE PROCEDE AL TRITURADO DE LAS CHUFAS PARA OBTENER HORCHATA LIQUIDA A BAJA TEMPERATURA, DE LA QUE SE SEPARA EL ALMIDON Y SE AÑADE CASEINATO SODICO, AZUCAR Y ESTABILIZANTES, ASI COMO UN EMULSIONANTE PREVIAMENTE FUSIONADO EN AGUA CALIENTE. POR OTRO LADO SE TRITURA PLATANO PELADO, EN PRESENCIA DE ACIDO ASCORBICO Y ACIDO CITRICO, FILTRANDO EL LICUADO RESULTANTE. SE MEZCLA LA HORCHATA DE CHUFA CON EL LICUADO DE PLATANO, EN PRESENCIA DE AZUCAR Y AROMATIZADO PARA SU ENVASADO EN CONDICIONES ASEPTICAS.
