Abstract
Un producto cárnico que contiene una mezcla de por lo menos una carne y un material proteico vegetal sin refinar. En una realizacion, el material proteicovegetal sin refinar del producto cárnico tiene un índice de solubilidad de nitrogeno entre aprox imadamente 30% y aproximadamente 80% y por lo menos una de lassiguientes propiedades: un índice de tolerancia a la sal entre aproximadamente 30% y aproximadamente 80%; una capacidad de hidratacion con agua de por lomenos 3,75 veces el peso del materi al proteico vegetal sin refinar; o una viscosidad de por lo menos 500 centipoise a una temperatura entre los 15 degree C y los 25 degree C. En otra realizacion, el material proteico vegetal sin refinar del producto cárnico tiene al menos una de las siguientes prop iedades: un peso del gel de porlo menos 30 gramos a una temperatura que oscila entre aproximadamente 15 degree C y aproximadamente 25 degree C en una mezcla de 5 onzas fluidas que contiene 5 partes deagua por cada parte de material proteico vegetal sin refinar, po r peso; o una resistencia del gel refrigerado de por lo menos 50 gramos al combinarse con 5partes de agua por cada parte de material de soja, por peso. En una realizacion particularmente preferida el material proteico vegetal sin refinar es unmateria l proteico de soja sin refinar, más preferentemente harina de soja, sémola de soja, soja molida, o copos de soja.
