    Sambal roa merupakan salah satu sambal khas nusantara dengan rasa dan aroma ikan roa asap yang khas. Produksi ikan roa yang terus menurun menuntut adanya inovasi pengembangan produk. Undur-undur laut merupakan bahan pengganti yang potensial, karena memiliki cita rasa krustasea/rebon yang mirip dengan terasi serta kandungan karotenoid yang dapat berperan sebagai pewarna alami.  Penelitian ini bertujuan untuk menentukan formula sambal roa inovatif melalui formulasi cabai, ikan roa asap, dan undur-undur laut  menggunakan I-optimal mixture amount design. Penelitian meliputi modifikasi, pembuatan, dan uji sensori deskriptif sambal roa, optimasi formulasi sambal roa dengan undur-undur laut, serta perbandingan antara sambal roa dengan undur-undur laut dan sambal roa komersial.     Sediment microbial fuel cell (SMFC) is one form of the microbial fuel cell (MFC) that can convert organic complex material in the sediment to generate electrons. This research was conducted to determine the characteristics of marine sediments from the Bay of Jakarta, to know the amount of electric current can be generated through SMFC, and to identify bacteria at the anode SMFC. This research was conducted in several stages which include the characterization of marine sediment samples, making SMFC circuit, electric current measurement, characterization SMFC substrate, and the isolation, characterization, and identi cation of bacteria. The study shows that marine sediments of Jakarta Bay have characteristics which include silty clay loam texture, organic carbon 2.19%, total nitrogen 0.19%, and phosphorus 128 ppm.     Pengembangan budidaya udang yang sering mengalami permasalahan besar terutama pencemaran sedimen tambak akibat sisa pakan. Microbial fuel cell (MFC) sebagai pendegradasi atau penurunan akumulasi bahan organik pada tambak udang belum pernah dikembangkan. Penelitian ini bertujuan menganalisis penurunan akumulasi bahan organik dan arus listrik yang dihasilkan pada sedimen tambak udang tradisional melalui microbial fuel cell . Tahapan penelitian meliputi pengukuran kualitas air dan analisis sedimen tambak, pembuatan rangkaian MFC, pengukuran arus dan tegangan listrik, serta karakterisasi substrat hasil proses degradasi bahan organik. Kualitas air tambak udang tradisional di Desa Jayamukti yaitu suhu berkisar 29-30°C; salinitas 18-20 ppm; pH 7,5-8,5; DO 3-4 mg/L; dan kecerahan 25-30 cm.     Chitosan has been developed for food product, agriculture, environment, and industry as medical,pharmaceutical, and cosmetics. The depolymerization of chitosan to chito-oligosaccharide was produce onsoluble product and has better function as antimicrobial. The objective of this research was to COS withhydrogen peroxide depolimerization for preservatives of fish boiled. Research method included chitosandepolymerization, characterization of COS, and characterization of traditional fish boiled quality. Theoptimum concentration of chito-oligosaccharide was 2% H2O2 with sonication at frequencies of 20kHz.The treatment produced yield 93.27±0.9%, molecular weight 2.83±0.1 kDa, polymerization degree 17±0.6,and it inhibited the growth of E. coli, S. aureus, and B. cereus. The dipping with 0.25% produce the best fishboiled quatity.

Chitosan is a biopolymer, non-toxic, and the nitrogen atom in the amine and hydroxyl group has free electron, so that can be used as an electrolyte polymer which has good ionic conductivity and can be fabricated as batteries. The purpose of this study was to determine the characteristics of polymer electrolyte chitosan-PVA batteries with addition of ammonium nitrate. The best material formulation obtained of polymer electrolyte made from 40 wt% chitosan, 60 wt% PVA, and 6% glutaraldehida. SEM showed that the polymer electrolyte formed was very homogeneous. Penelitian ini bertujuan mensintesis dan mengetahui karakteristik material biokeramik berbasis hidroksiapatit tulang ikan tuna. Selama penyimpanan dilakukan pengukuran terhadap nilai elastisitas, warna (L: kecerahan a: warna kromatik antara merah sampai hijau, b: warna kromatik antara kuning sampai biru), TBA (Thiobarbituric Acid) dan DIA (Daya Ikat Air) serta uji organoleptik, uji pelipatan (floding test) menunjukan bahwa pencucian 1 kali merupakan perlakuan terbaik.     Skate is a great commodity of fi sheries in Indonesia, however it has been less utilized. Stingray cartilaginous tissue contains glycosaminoglycan, which has been widely utilized in osteoarthritis therapy. Th e aim of this study was to characterize glycosaminoglycan from marine stingray (Neotrygon kuhlii) and freshwater stingray (Himantura signifer) cartilage. FTIR spectra showed similar pattern with chondroitin sulphate. Concentration of glycosaminoglycan from marine stingray cartilage was 74.767 mg/100 mL, and higher than that in freshwater stingray which was 66.767 mg/100 mL.

    Sport nutrition drinks are well-known in escalating athlete’s performance and endurance. These product developed from whey protein hydrolysates and soybean protein hydrolysates have already been recognized, however expansion from marine product is comparatively rare. Octopus (Octopus cyanea) widely acknowledged containing taurine and rich in amino acids is potential to be developed as ingredient for sport nutrition drink. The aims of this study were to create and characterize sport nutrition drinks based on marine peptides through Octopus protein hydrolyzate. Octopus protein hydrolysate has 77.78 ± 2.69% degree of hydrolysis and 751.02 ± 10.63 mg / 100g taurine. Sports nutrition drinks with the addition of 4% Octopus protein hydrolyzate was acceptable sensory panelists, and the serving size of 600 ml contained taurine 726.06 ± 0.82 mg and detected 17 types of amino acids.

    Microwave absorbent packaging materials currently tend to biomaterial. Chitosan is a dielectric biomaterial with polycationic properties. The aim of this study was to analyze characteristics of microwave absorbing packaging material made from composite chitosan-polyvinyl alcohol (PVA) polymer. The ability of the packaging material to absorb microwave was determined by reflection loss measurement. Formed packaging prototype resembles as a thin transparent yellowish plastic with thickness (0.11-0.22 mm) and the tensile strength (106.33±2.82-143.00±2.59 kPa). SEM analysis showed homogenous structure characterized by interaction between chitosan and PVA. Optimum absorption value was obtained from chitosan concentration of 1%, with average value of reflection loss was (-31.9289±4.0094) dB.<br />Keywords: chitosan, material packaging, microwave, reflection loss

    Ikan pari merupakan komoditas perikanan yang populasinya besar di Indonesia, tetapi pemanfaatannya belum optimal. Jaringan tulang rawan ikan pari mengandung molekul glikosaminoglikan dan telah dimanfaatkan dalam terapi osteoarthritis. Tujuan penelitian ini adalah menentukan karakteristik glikosaminoglikan dari tulang rawan ikan pari air laut (Neotrygon kuhlii) dan pari air tawar (Himantura signifer). Spektrum FTIR memperlihatkan pola yang sama dengan kondroitin sulfat. Konsentrasi glikosaminoglikan pada pari air laut adalah 74,767 mg/100 mL, konsentrasi ini lebih tinggi dibandingkan dari ikan pari air tawar, yaitu 66,767 mg/100 mL.
