Abstract
Ağırlıkça en az %50 toplam katı yağ içeren, dökülebilir olmayan yenilebilir bir yağda su emülsiyonunun üretimi için işlem olup, aşağıdaki aşamaları içerir: a. toplam katı yağın ağırlığına göre, sıvı formda ağırlıkça %5 ila %90 sert yağ sağlama; b. su ve sıvı yağdan oluşan bir sıvı karışım sağlama; burada karışım, sert yağın erime derecesinden düşük bir sıcaklığa sahiptir; c. sıvı formdaki sert yağı, su ve sıvı yağdan oluşan sıvı karışımla karıştırma; burada 'c' aşamasında sağlanan karışımın sıcaklığı, sert yağın erime derecesinin altındadır, ve burada trans doymamış yağ asidinin miktarı, toplam katı yağın ağırlığına göre ağırlıkça %5'ten azdır.
