Abstract
Способ получения вязкой съедобной эмульсии вода-в-масле, содержащей по меньшей мере 50 мас.% общего жира, включающий следующие стадии: (a) обеспечение 5-90 мас.% тугоплавкого жира к массе общего жира в жидкой форме; (b) обеспечение жидкой смеси воды и масла, где смесь имеет температуру ниже точки плавления тугоплавкого жира; (c) смешивание тугоплавкого жира в жидкой форме с жидкой смесью воды и масла, где температура смеси, обеспеченной на стадии (c), ниже точки плавления тугоплавкого жира, и где количество транс-ненасыщенной жирной кислоты составляет меньше 5 мас.% к массе общего жира.
