The present invention relates to distillery production, in particular to special vodka compositions with flavoring and aromatic additives.

Special vodka is known (RF Patent 2201443, C12G 3/06, published 03/27/2003), containing a water-alcohol liquid, honey, glycerin, aromatic alcohol obtained from orange peel, taken in a quantitative ratio determined by the recipe.

Known for special vodka "Spring Lemon" (RF Patent 2231541, C12G 3/06, published 06/27/2004), containing a water-alcohol liquid: sodium bicarbonate, aromatic alcohol of lemon oil, lactic acid and sugar syrup 65.8%, taken in a quantitative ratio determined by the recipe.

These vodkas have insufficient organoleptic properties, since they contain only one aromatic component - aromatic alcohol of the orange peel or aromatic alcohol of lemon oil, in addition, honey is a complex product that can cause allergies.

Known vodka "KREMLEVKA" (RF Patent 2249034, C12G 3/06, published 07.06.2004), which contains 40% aqueous-alcoholic liquid based on rectified ethyl alcohol brand "Lux", 2.9-3.1 kg complex food additives "LAR-SU", 3.8-4.2 kg of lactose, 3.9-4.1 kg of skimmed milk powder and 13.6-14.0 l of 65.8% sugar syrup. The complex food additive "LAR-SU" is a complex designed to soften and improve the taste of drinks, produced from a concentrate of lactulose, colloidal silver, succinic acid and water. The introduction into the water-alcohol liquid of only the complex LAR-SU food supplement without the use of other components gives the vodka a sweet and sour taste and smell, and in combination with lactose and powdered milk, the taste of creamy caramel and ginger aroma. The combination of vanillin with aromatic alcohols gives the product some sugary taste. In addition, the preparation of the product requires a large consumption of detoxification food additives that inhibit alcohol tolerance.

The problem to which the invention is directed, is to expand the assortment of special vodkas containing a detoxifying food supplement that inhibits alcohol tolerance and having high organoleptic characteristics.

The technical result of the invention is to improve the organoleptic properties of the composition, reducing the consumption of detoxification food additives that inhibit alcohol tolerance by expanding the range of high-quality vodkas with low toxicity.

The problem is solved by the fact that a special vodka is proposed that contains a detoxifying food additive that inhibits alcohol tolerance, a component containing sugar, aromatic alcohol of lemon oil and aqueous-alcoholic liquid from rectified ethyl alcohol and corrected drinking water, which, according to the invention, additionally contains aromatic alcohol of orange peel obtained from 1.8-2.5 kg of dry orange peel, as a detoxifying food additive that inhibits alcohol tolerance, contains t complex food additive "LAR-SU", as aromatic alcohol of lemon oil - alcohol of lemon oil obtained from 0.15-0.2 kg of lemon oil, as a sugar-containing component - sugar syrup 65.8%, in the following the ratio of ingredients, kg per 1000 gave the finished product:

At the same time, the qualitative composition of these components and their quantitative ratio ensure the achievement of a technical result, which consists in enriching vodka with valuable biological and aromatic substances and improving its quality by giving vodka a light aroma and a delicate taste of lemon with a hint of cinnamon and a touch of freshness, and softening the bitterness of vodka.

Thus, the main technical result is to give the taste of cinnamon in addition to the taste of lemon.

For the preparation of vodka special “PUTINKA WITH LEMON” take the following components:

- rectified ethyl alcohol "Lux" according to GOST R 51652-2000;

- drinking water according to GOST R 51232-98 and SanPiN 2.1.4.1074-01 with a hardness of up to 0.2 mol / m ³ for corrected water;

- complex food additive "LAR-SU" according to TU 9229-009-57770545-02;

- lemon essential oil according to TU 9151-005-47929464-98;

- dry orange peel, approved for use by institutions of the State Sanitary and Epidemiological Service of Russia;

- Refined granulated sugar in accordance with GOST 22-94;

- crushed active charcoal brand BAU-A according to GOST 6217-74.

The proposed special vodka is prepared as follows. A water-alcohol solution (sorting) is prepared in such a way as to obtain vodka with a strength of 40%. The resulting sorting is thoroughly mixed and, after adjusting its strength, is pumped to a pressure tank, from where it is sent to a coal-cleaning battery. Sorting filtration rate - up to 40 dal / h for fresh coal and up to 30 dal / h for regenerated coal. At the same time, fragrant alcohol of lemon oil is prepared. For this, 0.15-0.2 kg of lemon essential oil is placed in a distillation cube, 40-43 l of 50% aqueous-alcoholic liquid are added thereto, and aromatic alcohol of 75% strength is distilled off with a yield of aromatic alcohol of about 50% of the initial weight of water alcohol liquids. Aromatic orange peel alcohol is also prepared. To do this, 2.0-2.5 kg of dry orange peel is placed in a distillation cube, filled with 20-25 liters of water-alcohol liquid with a strength of 50%, insisted for 6-8 days with daily stirring and distilled, getting 10-12 liters of aromatic alcohol with a strength of about 75%.

Filtered vodka is sent to a finishing vat, where aromatic alcohol of lemon oil and aromatic alcohol of orange peel obtained as described above, the complex food additive LAR-SU, previously dissolved in vodka, and 65.8% sugar syrup with constant stirring are set . After making all the components, vodka is thoroughly mixed and the strength is checked. When deviating from the standard for strength, vodka is adjusted in the same vat by adding alcohol or water, followed by mixing and checking the strength.

Ready vodka is sent for bottling with mandatory control filtration.

Example 1

The proposed vodka contains the following ingredients per 1000 dal of the finished product:

complex food supplement "LAR-SU" - 2.5 kg,

aromatic alcohol of lemon oil obtained from 0.16 kg of lemon oil - 20.0 l,

aromatic alcohol of the orange peel obtained from 2.0 kg of dry orange peel - 10.0 l,

65.8% sugar syrup - 11.5 liters,

rectified ethyl alcohol "Lux" and corrected drinking water - the rest is 40% to the fortress.

Example 2

Vodka contains the following ingredients per 1000 dal of the finished product:

Organoleptic characteristics of vodka special "PUTINKA WITH A LEMON": appearance - a clear liquid without impurities and sediment, color - colorless; taste - soft, inherent to vodka, with a slight aftertaste of lemon with a hint of cinnamon and a touch of freshness; aroma vodka with a touch of lemon and cinnamon. The tasting score of the drink was 9.73 points. The tasting commission emphasized the soft harmonious taste of vodka, the vodka aroma with a touch of lemon and cinnamon, harmoniously combined with the natural alcoholic aroma of vodka, as well as the physical and chemical characteristics of the drink made with special vodkas made with Lux alcohol.

Samples of vodka of the following composition were also prepared.

Example 3

Vodka of this composition has a more pronounced alcohol taste, worsening its organoleptic properties. There is no hint of cinnamon flavor.

Example 4

Vodka contains the following ingredients per 1000 dal of the finished product:

aromatic alcohol of lemon oil obtained from 0.2 kg of lemon oil - 20 l,

aromatic alcohol of the orange peel obtained from 2.5 kg of dry orange peel - 11 l,

rectified ethyl alcohol "Lux" and corrected drinking water - the rest is 40% to the fortress.

Vodka of this composition has a more pronounced lemon flavor with a harsh shade of orange peel. There is no hint of cinnamon flavor. Thus, the above examples show that the specified technical result is achieved only with the claimed composition, and with a different composition (when going beyond) is not achieved.
