Abstract
La presente invención se refiere a un proceso para la preparación de un producto de leche agria mediante la modificación de materia prima de leche y una enzima reticulante que fortalece la textura. La invención también trata de un producto de leche que contiene glóbulos grasos de materia prima de leche físicamente modificada y que ha sido tratado con una enzima reticulante.
